  • Quality pork will have a light pink to dark red color, with no sour smell. When cutting the meat lengthwise, the inside should be dry, the fibers slightly shrunk, the skin soft, and the fat should be translucent white to slightly ivory, with no strong oily smell.
  • Clean pork is fresh meat, so it should have very good elasticity. Therefore, when purchasing, you should press the meat with your finger to create a dent but it should not leave a mark when you lift your finger.
  • Typically, good pork will have a layer of fat about 1/2 to 1 finger’s width. In which, the layer of fat and the lean meat are tightly attached to each other.

How to Make Char Siu Pork Using an Air Fryer

  • Prepare the Ingredients

    Add 5 cloves of garlic and 6 shallots, peeled, into a blender, then add 1/2 teaspoon of salt, 1 teaspoon of monosodium glutamate, 2 tablespoons of sugar, 1 teaspoon of oyster sauce, 1 teaspoon of soy sauce, 1 teaspoon of seasoning powder, 2 teaspoons of Mai Que Lo wine, 1/4 teaspoon of five spice powder, and 1/4 teaspoon of Thai caramel color.

    Blend the mixture until smooth.

    Soak the pork in diluted saltwater, then rinse thoroughly with clean water, and let it dry.

    • Clean the pork, then place it in boiling water for about 2 – 3 minutes. Quickly remove the pork and rinse it under clean water to effectively remove the smell.
    • Alternatively, you can use coarse salt dissolved in water, soak the pork for 25 – 30 minutes. After that, remove the pork and rinse it under running water.

  • Marinate the pork

    Place 500g of meat into a bowl, then add the blended spice mixture, and massage it well so that the meat absorbs the spices.

    Then wrap it in plastic wrap, and place it in the refrigerator refrigerator for about 2 – 3 hours.

  • Cook the meat

    Take the marinated meat out, add 1 tablespoon of malt syrup and mix well. Then place the meat in the air fryer.

    The remaining marinade can be put in a pan, heat it on the stove to boil for about 3 minutes until it thickens, then turn off the heat.

  • Making Char Siu

    You continue to grill the meat with the air fryer, taking the meat out every 10 minutes to flip it over and then putting it back in the pot, repeating this about 4 times (40 minutes) until the meat is cooked.
