How to choose fresh and delicious pork
- To make Thai-style grilled dishes, choose the pork shoulder part that has both lean meat and a bit of fat, which will make it more tender and delicious when grilled.
- Choose pork that has a bright pink color, no strange smell, and clear white fat. Meat that is dull and smells bad is usually meat that has been stored for a long time and is not good.
- Use your hand to press the meat; if it springs back, the meat is firm and does not leave a dent, and if it feels dry and does not stick to your hand, it is good meat.
- Absolutely do not buy if you see small grains resembling rice mixed in the meat fibers, as these could be tapeworm eggs, which are very harmful if consumed.

How to prepare Thai-style grilled pork

Prepare the pork
Massage the pork shoulder with salt thoroughly and then rinse it with clean water, letting it drain.
Use a meat mallet to pound the entire piece of meat to tenderize it. Next, use a fork to prick the meat lightly to help it absorb the marinade better.
How to prepare clean and odor-free pork- After washing the meat, boil a pot of water and blanch the pork for about 2 minutes, then rinse with cold water to keep the meat clean and odor-free.

Marinate the pork
Rub the meat evenly with a mixture of 1 teaspoon of pepper, 3 tablespoons of oyster sauce, 3 tablespoons of brown sugar, and 2 tablespoons of soy sauce. Let it sit for about 4 hours to allow the meat to absorb the flavors.

Peel the shallots, wash them clean, and chop finely. Wash the scallions and coriander, then chop them finely.
