Chicken cartilage 400 gr Cucumber 2 pieces Mint 3 sprigs Vietnamese balm 3 sprigs Cilantro 2 sprigs Garlic 2 cloves (minced) Chili 1 piece (minced) Shallot 1 bulb Oyster sauce 1 tablespoon Annatto oil 1.5 tablespoons Fish sauce 3 tablespoons Vinegar 3 tablespoons Cooking oil 1 tablespoon Common seasoning a little (Sugar/ salt/ pepper/ seasoning powder)

How to choose fresh cucumbers

  • Fresh cucumbers are those that have a bright green color, distinctly even color, look smooth and shiny, and especially do not have any rough or unusual tiny spots on the surface. Additionally, a cucumber that is crunchy and sweet usually has a short and round shape.
  • At the same time, a delicious cucumber should feel firm and solid when held, have a straight shape, and be less bent. When touched lightly, it should not feel too hard but have a moderately soft sensation.

    Add 1 tablespoon of oyster sauce, 1/2 teaspoon of seasoning powder, 1/4 teaspoon of salt, and 1/4 teaspoon of pepper to the bowl of chicken cartilage, use chopsticks to mix and marinate for 30 minutes to absorb the flavors.

    How to Clean Chicken Cartilage Without a Strong Odor

    • Wash the chicken cartilage and cut it into bite-sized pieces. Do not cut them too small as they may crumble and become salty.
    • Use salt to rub into the chicken cartilage. Mix them well so that the salt is evenly absorbed through the cartilage. This method will help eliminate the fishy smell.
    • Let the mixture sit for about 10 minutes and then rinse it off with water.

    Wash the cucumber in diluted salt water for 15 minutes, then take it out and wash it again with clean water. Use a knife to cut off both ends of the cucumber, then use a grater to shred it into long thin strips.
