How to make Caramel Milk Pudding

Whip the egg whites
Put 100g of egg whites into a bowl along with 30g of sugar and use a whisk to beat the mixture until it dissolves and forms light bubbles like soap.

Cook the caramel milk mixture
Put 1 tablespoon of water and 50g of sugar into a pot, cook over medium heat while stirring the pot until the sugar dissolves, boils, and gradually turns a brown color (caramel color), then add 70g of heavy cream and use a flat whisk to mix it well.
Then add 500ml of unsweetened fresh milk and stir well, cook for another 5 minutes over medium heat, then turn off the heat.

Dissolve and strain the pudding mixture
Gradually add the caramel milk mixture to the egg whites that have been dissolved with sugar while using a whisk to mix well.
Then use a sieve to strain the pudding mixture again to remove any residue, ensuring a smooth mixture.

Pour into molds
Pour the pudding mixture into glass cups or glass containers, using aluminum foil to tightly cover the mouth of each cup.
Place the pudding cups into a bowl or glass basin and pour hot water into it (about half the bowl) and then put it in the oven to bake at a temperature of 150 degrees Celsius for 35 – 40 minutes. Then place it in the refrigerator to chill the pudding.
Note: You should preheat the oven for 10 minutes at 200 degrees Celsius to stabilize the temperature.

Make the caramel sugar layer
Add 1 tablespoon of water and 50g of sugar into a pot, boil the sugar water over medium heat until the mixture turns a brown color (caramel color), then turn off the heat.
Finally, pour in 40ml of water and stir well.

Whipping heavy cream
Add 80g of heavy cream and 6g of sugar into a bowl, then place the bowl in a basin or container of ice water and use a whisk to whip the mixture for about 15 minutes until it dissolves, becomes fluffy, and forms a thick layer of cream.
Tip: Whipping heavy cream in cold ice water will help the cream whip up easily.

Scoop 1 teaspoon of caramel cooked in step 5 onto the surface of the pudding and spread it evenly, then wait about 10 – 15 minutes for the caramel to set.
Next, scoop about 1 tablespoon of heavy cream on top and spread it evenly to create a layered effect.
