Mackerel 300 gr Ginger 1 bulb Chili 2 pieces Cilantro 2 branches Green tea 200 ml (green tea) Mayonnaise 2 tablespoons Cooking oil 1 tablespoon Fish sauce 1 tablespoon Common spices a little (Salt/ pepper/ sugar/ monosodium glutamate/ seasoning powder)

How to choose fresh mackerel

For fresh mackerel:

  • You should choose fish with clear, slightly bulging eyes, which indicates they are still fresh.
  • Fresh mackerel has shiny skin, not torn or peeling, and has many unusual blue-purple spots.
  • You should not choose mackerel with open mouths and when touched, the body of the fish feels soft, lacking elasticity.

For frozen mackerel:

  • Choose pieces of fish with dark pink or bright red flesh, do not choose pieces that are dull or have turned light yellow.
  • Observe the skin of the mackerel, fresh mackerel usually has shiny, reflective skin.
  • Additionally, you can check by pressing the flesh of the fish with your hand; if it does not indent when pressed and the flesh does not stick to your hand, then that piece of fish is still fresh, and vice versa.

How to Cook Mackerel with Turmeric

  • Prepare the Ingredients

    Mackerel cut into pieces about 1 finger length. To remove the fishy smell of mackerel, you can soak it in rice water for about 15 minutes. Then take it out, rinse with clean water and let it drain.

    Turmeric root peeled and sliced thinly. Chili washed clean, smashed with a knife.

    • To eliminate the fishy smell from mackerel, you can soak the fish in a mixture of water mixed with a little salt for about 5 – 10 minutes. Then rinse well with water.
    • Besides salt, ginger is also a root that helps effectively remove fishy odors. Cut the ginger root into thin slices, put it in water and soak the fish for about 5 minutes.

  • Marinate the Fish

    To make the marinade sauce, mix 1 tablespoon of mayonnaise, 1 tablespoon of fish sauce, 1/2 teaspoon of seasoning powder, 1/3 teaspoon of pepper, and 1 tablespoon of sugar. Stir well to ensure the spices are completely dissolved.

    Then, add the marinade sauce to the bowl containing the fish, gently turn the fish to allow the spices to coat all sides of the fish. We will marinate the fish for 30 minutes.

    Tip: To increase the richness and glossiness of the fish and make the dish more delicious, you should marinate the fish with mayonnaise sauce.

  • Cook the Fish

    Put a pot on the stove. Add 1 tablespoon of cooking oil, wait for the oil to heat up, then add 1 tablespoon of sugar to create caramel color for the fish dish. Stir well so that the sugar completely dissolves in the oil, avoiding clumping or burning.

    Once the sugar gradually turns light brown, add the sliced galangal and crushed chili. Stir well until the sugar turns a beautiful brown color, then layer the fish into the pot. Turn the fish evenly to allow it to absorb the seasoning and cook evenly.

    After cooking for about 10 minutes, when the fish is boiling, add 200ml of green tea and continue to cook the fish. Then add 1 tablespoon of mayonnaise, adjust the heat to low, and cook the fish for another 15 minutes. Taste and adjust the seasoning to your family’s preference, then turn off the heat.

    Tip: Using green tea instead of plain water or coconut water helps eliminate the fishy smell and adds a unique flavor to the dish.
