  • You should buy mushrooms that grow in clusters because seafood mushrooms do not grow individually. The mushrooms have a chewy and crispy texture, slightly porous, and when eaten, they have a flavor similar to seafood.
  • To buy fresh and safe mushrooms, you should choose reputable places to know the origin and expiration date of the mushrooms.
  • Do not buy if you see mushrooms with strange colors or bruised.

  • Prepare the ingredients

    After buying seafood mushrooms, wash them clean, cut the stems, then soak them in diluted salt water for about 10 minutes, then take them out to drain. Next, cut large mushrooms in half and leave smaller ones whole.

    Wash the tomatoes and then use a knife to cut them into wedges.

    After peeling, wash the pineapple and cut it into bite-sized triangles.

    Chives and green onions should have their roots and wilted yellow leaves removed, washed clean, and then chopped finely.

    First, you place a pot on the stove and add 1 spoon of cooking oil into the pot. Once the oil is hot, add the tomatoes and sauté with 1 teaspoon of salt until the tomatoes are soft, then add the pineapple and stir for about 30 seconds over high heat.

    Next, pour about 1 liter of filtered water into the pot and continue to cook over high heat until the water boils, then add the mushrooms.

    After about 5 minutes, add 2 teaspoons of tamarind juice to the pot to create sourness for the soup and season with an additional 1/2 teaspoon of monosodium glutamate.

    Finally, add chopped cilantro and green onions to the pot, stir briefly until it boils again. At this point, you can adjust the seasoning to your taste and then turn off the heat.
