How to Choose and Store Crabs
How to Choose Fresh Crabs
– When choosing crabs, look for an opaque gray shell on the outside, press on the crab’s abdomen to feel it is firm; a large abdomen indicates the crab has a lot of meat.
– You should choose crabs that are really fresh, with the abdomen still firmly attached to the body, legs and claws moving healthily and flexibly, and the spines on the claws and crab shell still sharp.
How to Store Crabs Before Processing
For unprocessed crabs, you should keep them in the freezer or place them on a block of ice. The cold will make the crabs firm, making it easier for you to process them.
Note:
You can use either freshwater crabs or sea crabs to make the dishes below.
You should not drink tea to rinse your mouth after eating crabs because the tannin content in tea will react with the protein in crab meat and form stones, affecting health.
