Tips for selecting good pork:

  • First, you must choose fresh meat. The color of good pork is bright pink, not too red or too pale. Pork that is pale, greenish, and has a bad smell is spoiled, so you should not choose this type of meat.
  • Pork that is firm and has high elasticity is good meat. You can test by pressing your finger into the meat; if it bounces back immediately, is not slimy, and does not leak juice or liquid, it is good.
  • You should choose pork shoulder, which has both lean and fatty parts so that your dish does not become dry or too greasy from excess fat.

How to choose fresh grapes:

  • Shape: Choose grapes that are not too large, and check for a powdery coating on the skin, which indicates good, fresh grapes.
  • Stems: Freshly picked grapes have green and firm stems. Grapes that have been stored for a long time will have brownish-black, wilted stems.
  • Color: Each type of grape has its own characteristic color (green grapes, red grapes, etc.). However, ripe grapes will have taut, shiny skin.

    After purchasing the grapes, wash them thoroughly, remove the stems, and cut them in half to remove the seeds. Put all the grapes into a blender and blend until smooth. Then strain through a sieve to collect the juice into a separate bowl.

  • Prepare the pork

    After buying the pork, you should scrub it clean with coarse salt, rinse it with water, and then place it in a basket to drain. Cut the pork into bite-sized pieces. Then use a meat mallet to tenderize the meat and make it thinner.

  • Rolling the meat

    After obtaining the desired thin slices of meat, spread the meat on a wide cutting board, then place the cut cheese sticks inside and roll the piece of meat tightly. After that, use a string to wrap several even rounds around the rolled meat. (As shown in the image below)

  • Marinating the meat

    Prepare a large bowl, add the marinade consisting of 1/2 tablespoon of salt, 1/3 tablespoon of ground pepper, 2 tablespoons of oyster sauce, 1 tablespoon of honey, and 1/2 tablespoon of cooking oil, then mix well.

    Add the cheese rolls to the marinade and mix evenly, marinating for about 30 minutes.

  • Make the sauce

    Place a pan on the stove, add cooking oil. When the oil is hot, gradually add sliced shallots and bay leaves to sauté until fragrant.

    Next, add the grape juice and stir well to cook the sauce. Reduce to low heat and simmer to thicken the sauce.

  • Pan-sear the meat

    Place another pan on the stove, add cooking oil and a sprig of rosemary. When the oil is hot, gradually add the cheese-stuffed pork rolls and pan-sear on low heat until the surface is firm, allowing the pork to absorb the seasoning for about 10 minutes.

  • Grilling Meat

    To prepare for grilling meat, you first need to preheat the oven to 200 degrees Celsius for 15 minutes. Then, place the cheese-covered meat on the grill rack and put it in the oven, grilling at 200 degrees Celsius for 40 minutes.

    After 40 minutes, open the oven to take the meat out, slice it, arrange it on a plate, drizzle sauce on top, and then you can enjoy it.
