How to prepare Grilled Scallops with Green Onions using an Air Fryer

Prepare the scallops
After purchasing the scallops, use a sharp knife to insert into one side of the scallop shell and gently pry it open. Once the shell is opened, slide the knife gently underneath the scallop meat to detach it from the shell.
Remove any dark meat, muscle fibers, small cartilage, and the stomach surrounding the white meat of the scallop. Keep the white meat (scallop adductor) and the orange roe inside (depending on preference). Then rinse the scallop meat with salted water and blanch it in boiling water for about 2 – 3 minutes, then rinse with cold water and let it drain.
Quick and easy way to separate scallops from their shells
- You need to use a specialized prying knife and a sharp knife to cut the meat away from the scallop shell.
- When the scallop shell is opened, use the prying knife to gently slide underneath the meat to extract it from the shell.
- The dark meat surrounding the white meat of the scallop should be removed as it is the digestive gland, which includes a black lump and a tube filled with mud. It is important to discard the cartilage of the scallop, as it should not be eaten.
- After the meat is separated from the shell, gently remove the meat. Keep the tentacles (mantle), white adductor, and the red meat.
How to eliminate the fishy smell of scallops:
- To remove the fishy smell of scallops, after shelling, you can soak the scallops in water mixed with a little salt and lemon juice.
- Alternatively, you can soak the scallops in alcohol or vinegar.
- Another quite effective method is to briefly blanch the scallop meat in boiling water with a bit of smashed lemongrass and ginger for about 1 – 2 minutes.

Prepare other ingredients
Wash the scallions and chop them finely. Roast the peanuts until golden and crush them. Slice the chili peppers thinly.

Make scallion oil
Place a pan on the stove, add 2 tablespoons of cooking oil and heat it up.
When the oil is hot, turn off the heat immediately, then add the scallions and stir for about 1 minute before transferring them to a bowl.
Add 1/4 teaspoon of salt, 1/3 teaspoon of sugar, and 1/3 teaspoon of monosodium glutamate to the bowl, mix well until the seasonings dissolve, then taste and adjust to your preference.

Grilling scallops
Preheat the air fryer for about 3 minutes.
Then place the scallops in the tray and put it in the pot, grill the scallops at 160 degrees Celsius for 10 minutes.
After 10 minutes, take the scallops out, drizzle a little green onion oil and some sliced chili on top, then put it back in the pot and grill for another 3 minutes at 160 degrees Celsius to finish.
Tip:
