How to choose good scallops

How to make Baked Scallops with Cheese

Prepare the scallops
Insert the tip of a sharp knife into one side of the scallop, gently prying it open. When the shell is opened, slide the knife gently underneath the meat of the scallop to remove it from the shell. Carefully take the meat out.
Remove the dark-colored meat, the muscle fibers, the small cartilage, and the stomach surrounding the white meat of the scallop. Leave the remaining white meat. Then rinse the scallop meat with saltwater; you can keep the orange roe inside according to your preference.
For the shell, keep one half of the shell, rinse it with saltwater until clean, and then place the scallop meat on top to prepare for grilling.
Tip:
- Scallops should be soaked in water for about 2 – 3 hours before separating the meat. This helps the scallops release all the sand and mud inside.
- You should rinse the scallops with salt to reduce the fishy smell.

Make the cheese sauce
In a bowl, add 20g of melted unsalted butter, 10g of mayonnaise, 1 teaspoon of ground pepper, and 1/2 teaspoon of salt, then mix well.

Grilling scallops
Place the giant scallops on a baking tray for 3 minutes, then drizzle the prepared butter sauce over the top.
Grill over medium heat until the scallops are slightly cooked, then sprinkle grated Mozzarella cheese on top. Grill for an additional 5 – 10 minutes until the cheese melts.
Tip: You can also grill them in the oven. Preheat the oven to 180 degrees Celsius for 10 minutes, then place the scallops inside to grill for about 5 – 10 minutes. -

How to store scallops:
- Cleaned scallops can be kept in the refrigerator for about 2 days, keeping the round shell facing down.
