How to prepare Pumpkin Peanut Soup

Prepare the pumpkin
After buying the pumpkin, use a peeler to remove the skin, wash it clean, and let it drain.
Next, use a knife to cut the pumpkin into bite-sized pieces about 1.5 – 2 finger lengths long.

Prepare the other ingredients
Shallots should be peeled, washed clean, and sliced thinly.
After removing the roots and damaged leaves, wash the green onions clean and chop them finely.
Wash the peanuts once with water, discard any spoiled ones, and crush them with a pestle.

Cook the soup
Place a pot on the stove, add 1 teaspoon of cooking oil and the sliced shallots into the pot, sauté until fragrant. Then add 1 liter of water along with the crushed peanuts.
Cook over medium heat for about 5 minutes until the water boils, then skim off the foam and add the pumpkin, simmering for another 8 – 10 minutes. Then season with 1/2 teaspoon of salt and 1 tablespoon of vegetarian seasoning in the pot.
Cook for about 2 minutes until the soup comes back to a boil, adjust the seasoning to taste, then ladle the soup into a bowl. Sprinkle a little pepper and chopped green onions on top for an appealing finish!
