Ingredients for Crab Pumpkin Soup For 2 people

Cauliflower 1 piece Pumpkin 200 gr Sea crab 1 piece Chicken broth 350 ml Fresh cream 50 ml Unsweetened fresh milk 30 ml Seasoning powder 1/2 teaspoon Unsalted butter 15 gr

How to choose fresh pumpkin

  • Choose fruits that are deep orange in color, hard, feel heavy in hand, and are not bruised or scarred. When using immediately, choose fruits with a sunken bottom and less flesh.
  • If not using immediately, you should select fruits with a stem length of 2 – 2.5 cm, avoiding those without stems as they spoil quickly and cannot be stored for long.

How to choose fresh and delicious crabs

  • When choosing crabs, look for a dull gray shell on the outside, press the crab’s belly to feel it is firm, and a large belly indicates the crab has a lot of meat.
  • Do not choose crabs that have green claws and shells; if you press the belly and it feels soft, it is a watery, spongy crab with little meat and not delicious.
  • You should choose a very fresh crab, where the barnacles are still firmly attached to the body, the legs and claws move strongly and flexibly, and the spines on the claws and shell are still sharp.
  • If you want to eat crabs with a lot of meat, choose male crabs; if you want to eat crabs with roe, choose female crabs.

How to make Pumpkin Crab Soup

  • Prepare the crab

    After buying the crab, do not cut the string tying the crab immediately, but pierce the crab to bleed first.

    Turn the crab’s belly upside down and use scissors or a sharp knife to pierce straight into the hollow part until the legs and claws are fully extended, then wash thoroughly with salt water.

    After cleaning the crabs, place them in a steamer until they turn orange, then take the crabs out onto a plate to cool.

    Next, separate the crab shell onto a plate first to avoid spilling the roe, remove the crab hairs, and take the meat out.

    Tip: When boiling crabs, add a little water to retain the crab’s sweetness. Only add enough water to just cover the crabs.

    Heat a pot, then melt 15gr of unsalted butter and add pumpkin, onion, cauliflower to sauté for 2 minutes until the vegetables are cooked.

    After sautéing the vegetables until cooked, add 350ml of chicken broth and cook for 15 minutes until the vegetables are very soft.
