How to choose fresh and delicious flounder
- Choose fish that are diamond-shaped and flattened on both sides. Observe the fish’s eyes; if they are clear and not cloudy, then the fish is fresh.
- Check the gills of the fish; fresh fish have pink-red gills. Gently press the fish’s flesh; if you feel its elasticity, it is a good choice.
- Do not choose fish with dark red gills or cloudy eyes, as these may be fish that have been dead for a long time and are not tasty.
- Absolutely do not buy flounder if pressing the flesh leaves a dent, as they may be spoiled fish.

Prepare and Marinate Flatfish

Place a pan on the stove, add 50ml of cooking oil and heat it up.
