Mackerel 500 gr Lemongrass 2 stalks Green onions 4 stalks Chili 2 pieces Cooking oil 100 ml Common spices A little (sugar/ seasoning/ salt/ monosodium glutamate)

How to choose fresh and delicious mackerel

  • When choosing mackerel, opt for those that are diamond-shaped, with many shiny yellow stripes along the body, and have a light-colored back as these are the good ones.
  • For this dish, you can buy filleted mackerel to save time on deboning.
  • Avoid choosing mackerel with a large and blunt head; according to the experience of coastal residents, these mackerel are not good. Good mackerel will have a slightly wide head, slanted mouth, and the lower jaw will protrude.
  • Additionally, do not choose mackerel that are too large or too small; only choose mackerel that are 10 – 15 cm long as these are mature mackerel, meaty, and the most delicious.

How to prepare Fried Mullet with Lemongrass and Chili

  • Prepare the ingredients

    After purchasing the mullet, scale it, cut off the head and tail, and gut it to clean the insides.

    Carefully fillet the fish along the backbone without cutting through the flesh, then use the back of a knife to lightly pound the surface of the fish.

    • To prevent the fish bones from sticking to the flesh, handle the mullet gently when filleting.
    • Pounding lightly on the body of the fish helps to break the bones.

    Green onions should have their roots removed, discard any wilted leaves, wash and drain, then cut into pieces about 2 finger joints long, wash again, and chop finely.

    Remove the stems from the chili peppers and wash them. For lemongrass, cut off the roots and green leaves, wash thoroughly, and then chop finely.

    Add green onions, lemongrass, chili, and 1 tablespoon of sugar into a mortar and pound them until finely crushed.

    Use a spoon to scoop the lemongrass chili mixture and spread it evenly over the surface of the fish, then gently fold the two pieces of fish together. Marinate for about 15 minutes to let the seasoning soak in.

    Heat a pan on the stove, add 100ml of cooking oil, wait for the oil to heat up, then add the fish to fry. Adjust the heat to medium and fry both sides of the fish until golden brown for about 10 minutes, then turn off the heat and place the fish on a plate.
