Ingredients for Oxtail Stew with Papaya Serves 2

Oxtail 1 piece Beef 300 gr Papaya 1 fruit Lemongrass 4 stalks Chili 1 piece Garlic 3 cloves Shallots 4 bulbs Ginger 1 piece Green onions 4 sprigs Basil 1 sprig Wine a little Annatto seeds a little Shrimp paste 1/2 tablespoon Cooking oil 1 tablespoon Common spices a little (salt/ sugar/ seasoning/ monosodium glutamate/ pepper)

  • You should buy the whole beef tail, do not choose a chopped beef tail, as it will be very difficult to distinguish between fresh and spoiled meat.
  • The meat on the beef tail should be bright red, not mushy or have unusual colors; if the meat color is too bright, be cautious as it may have been soaked in chemicals.
  • The skin of the beef tail should be slightly yellowish, not too yellow or silver, as this may indicate that the beef tail has been stored for a long time in the freezer.
  • Choose a reputable place to buy, select shops where you have previously known the source of the food. You can choose to buy from clean food stores or supermarkets to ensure the origin.

How to choose fresh beef

  • Fresh beef will have a dark red color, with uniform, shiny color, looking appealing.
  • When touched, the meat will not stick to your hand because there is a dry layer on the meat fibers.
  • Choose small, tender beef cuts; do not buy large and tough cuts.
  • If the beef has a pale green color, with round white spots between the meat fibers, it indicates the beef may have parasites, worms, or rice issues. You should also avoid buying any meat that has a foul smell.

How to choose fresh papaya

  • Choose a long, heavy fruit, evenly ripe, with a sticky stem for a sweet and delicious taste, with few seeds and thick flesh.
  • The best papaya is the two-skin type: the outer skin is yellow with tiny green spots, and the elongated fruit has a rich pulp.
  • Avoid buying papayas if it has rained a few days prior, as the papaya will taste bland.

  • Prepare the beef tail and beef

    After washing the beef tail and beef, briefly blanch them in boiling water with 2 stalks of lemongrass, 1/2 piece of ginger, and a bit of alcohol for 10 minutes.

    After 10 minutes, remove the beef tail and beef, then rinse them with cold water.

    Slice the beef into bite-sized pieces, and chop the beef tail into sections about 2 fingers wide.

    • You can also use a small bowl of white alcohol and soak the piece of beef in it for 10 – 15 minutes, then rinse the meat with clean water.

    Shallots and garlic are peeled, washed, and chopped. Chilies are washed. Green onions are washed and cut into sections.

    Papaya is peeled, rinsed with water, and cut into bite-sized pieces. Basil is washed, and only the leaves are picked.

  • Marinate the beef tail and beef

    Add the beef and beef tail along with all the garlic and shallots, 1 teaspoon of monosodium glutamate, 1 teaspoon of salt, 1 teaspoon of seasoning powder, 1 teaspoon of sugar, 1 teaspoon of annatto powder, and 1/2 tablespoon of fermented shrimp paste.

    Then mix well and marinate for 30 minutes to allow the beef and beef tail to absorb the spices.

  • Stir-fry the oxtail and beef

    Place a pan on the stove, add 1 tablespoon of cooking oil, then add 2 stalks of lemongrass, 1 chili, and 1/2 piece of ginger.

    When the oil is hot, add the oxtail and beef, stir well and sauté over medium heat for 5 minutes until browned.

  • Stew the dish

    After stir-frying, prepare a pot of water and bring it to a boil, then add the stir-fried beef and oxtail and cover it.

    Stew the beef and oxtail on low heat for 90 minutes. Then add the papaya and cook for another 15 minutes, season to taste, and turn off the heat.

    Now ladle the soup into a bowl, then add some basil leaves and green onions, and it’s ready to enjoy.
