- Avoid buying beef that is pale green, has white spots like rice grains on the meat fibers, as it may be infected with harmful parasites. At the same time, the fat should not be dark yellow, and the meat should not be slimy or sticky when pressed, which indicates poor quality beef.
How to choose fresh and delicious potatoes
- Good potatoes, when picked up, will feel heavy, firm, and smooth. Yellow potatoes will be sweeter than those with a creamy white color.
- Absolutely avoid buying sprouted potatoes or those that have turned green as these potatoes contain a high level of toxins, posing health risks to consumers.

- Fresh and delicious carrots will have a deep orange color, bright skin, and the root will be firm and solid. The carrot tops are still green and not wilted.

Prepare the beef
Wash 300g of beef thoroughly, cut it into bite-sized square pieces, and it is recommended to cut across the grain to prevent the beef from being chewy when eaten.
Tip: To prevent the beef in this soup from having a strong odor, place the beef in a pot of cold water and then bring it to a boil on the stove (do not add the beef when the water is already boiling). When the beef is slightly cooked, it will help reduce the smell of the beef.

Marinate the beef
After cutting the beef into bite-sized pieces, marinate it with: 1 tablespoon of minced ginger, 1/2 teaspoon of pepper, 1/4 teaspoon of salt, 1 tablespoon of sugar, and 1/2 teaspoon of fish sauce.
Mix the beef well and marinate it for 30 minutes.
Note: If you have time, you can also prepare and marinate the beef overnight in the refrigerator to help the beef absorb the spices more deeply. -

Add 1 tablespoon of cooking oil (reuse the oil from frying the potatoes earlier) into the pot, add the minced garlic and sauté until fragrant. Then, add the beef and stir-fry until the beef is seared.
