  • Avoid choosing stems that are too dark or too pale, with thick stems and many leaves.
  • Do not buy bunches with blemishes, holes, soft stems, or wrinkled skin, as they may be too old or stored for too long, making them very tough to eat.

  • Prepare the ingredients

    To remove dirt and unpleasant odors, soak the beef in diluted salt water for about 15 minutes, then rinse it several times with clean water and let it drain.

    Use a knife to slice the beef into thin, bite-sized pieces.

    Peeled garlic, minced finely.

    Remove the old, bad leaves from the sweet potato leaves, cut them into bite-sized pieces, and rinse them 2-3 times with water until clean. Next, bring a pot of water with 1 teaspoon of salt to a boil, blanch the sweet potato leaves for about 1 minute, then remove and immediately soak them in a bowl of cold water; once the leaves are completely cool, drain them in a colander.

    • Method 2: Soak the beef in white wine for about 15 minutes, then rinse it under cold water.

  • Marinate the beef

    Put the beef into a bowl, mix well with 1/2 of the minced garlic, 1 teaspoon of seasoning, 1/2 teaspoon of monosodium glutamate, and 1/2 teaspoon of ground pepper.

    Put a pan on the stove, add 1 tablespoon of cooking oil and heat it, then add the remaining minced garlic and sauté until fragrant.

At this point, add the beef back in, mix well, and season with 1/2 teaspoon of seasoning, 1 tablespoon of oyster sauce, stirring until the spices are dissolved.

    Taste and adjust seasoning as desired, stir-fry for another minute until the beef is just cooked, then turn off the stove. Serve the stir-fried sweet potato leaves with beef on a plate, sprinkle a little ground pepper and it’s ready to enjoy.

    Tip: To prevent the beef from becoming tough, stir-fry the beef on high heat and do not overcook it.
