How to choose fresh and delicious water spinach

  • For water spinach, you should choose a bunch with stems of moderate size, bright green color, small leaves, and plenty of tips.
  • Choose stems that are crispy, feel firm, and have smooth, shiny skin, as they are the tender parts and will be soft when eaten.
  • Do not select stems that are too dark or too light in color, with thick stems and many leaves.
  • Avoid buying bunches with bruises, pests, soft stems, or wrinkled skin, as these could be old stems or have been stored for too long, making them tough to eat.

  • Fermented rice is a traditional seasoning in Vietnamese cuisine, originating from the North. It has a strong sour and fragrant taste, typically made from leftover rice or noodles. Additionally, fermented rice is rich in protein and vitamins, which are very beneficial for human health.

  • Prepare the ingredients

    After purchasing the water spinach, remove the old, tough parts, wash the tender parts thoroughly with water, and let them drain.

    Peel the single garlic, wash it clean, use 1/4 of a clove sliced thinly to stir-fry together and decorate with the water spinach, and crush the rest before finely chopping it to sauté for fragrance.

  • Blanch the water spinach

    Put a pan on the stove with about 100ml of filtered water and 1 teaspoon of salt, boil over high heat until the water boils, then add the cleaned water spinach to blanch briefly.

    When the spinach just changes color and is slightly cooked, turn off the heat and transfer the spinach to a plate.

  • Stir-fry the dish

    Heat a pan on the stove, add 2 tablespoons of cooking oil and wait for the oil to heat up, then add garlic and sauté until fragrant. When the garlic turns golden, add the blanched water spinach and stir-fry vigorously over high heat.

    Next, add the sliced garlic and the prepared fermented rice water, stir well. Then season with 1 teaspoon of seasoning and stir-fry until the water spinach absorbs the seasoning, then turn off the heat and transfer to a plate.
