How to choose good sticky rice
- Only use sticky rice to cook bamboo rice for the dish to be delicious, true to its flavor, and maintain its characteristic aroma, stickiness, and sweetness.
- To choose good sticky rice for cooking bamboo rice with the right flavor, you need to select freshly harvested glutinous rice, with large, plump, opaque white grains and a natural rice aroma, avoiding those with a strong or unusual smell.
- You can taste the rice grains; if you bite into the rice and find a slight sweetness with no strange taste, then it is good sticky rice.
- Do not purchase broken sticky rice grains, those with many yellow grains, that are musty, or have weevils, or the type of rice with belly white.
Notes when choosing other ingredients for bamboo rice
- You can use bamboo tubes, rattan tubes, or giang tubes, depending on the size of the tube to hold the amount of sticky rice prepared.
- The bamboo/rattan used should not be too young or too old; the most suitable type is bamboo/rattan from October to January and should be fresh, green, not wilted, and free of pests.
- Additionally, you can also use banana leaves or dong leaves interchangeably!

Cooking lam rice
Burn the prepared straw or charcoal, then place the bamboo tubes to roast until cooked.
When you see steam rising from the mouth of the bamboo tube and smell the aroma of rice, that means the lam rice is cooked.
When the rice is done, take the bamboo tubes out, let them cool, then use a knife to separate the outer skin of the bamboo tube, leaving a thin layer of bamboo strip inside so that when eating, you can peel off that skin.



Making sesame salt
After purchasing peanuts, you should sort out the bad and shriveled ones.
Place a pan on the stove, wait for the pan to heat up, then add the peanuts and roast for 5 – 10 minutes until the peanuts are golden brown on both sides.
• You can also soak the peanuts in a bowl of water to allow the shriveled ones to float for easier removal, then scoop out the peanuts and let them drain.
• During the roasting process, remember to stir frequently and keep the heat low to ensure the peanuts are evenly golden without burning.
• Besides roasting peanuts in a pan, you can also roast them in a microwave!

After roasting the peanuts, take them out and use your hands to remove the peanut skins.
Place a pan on the stove, wait for the pan to heat up, then add the fine salt and stir well, and then transfer it to a small bowl.
Continue to place the pan on the stove to roast the sesame seeds, roasting on low heat, stirring continuously for 2 – 3 minutes or until the sesame seeds turn brown, shiny, and occasionally you hear popping sounds or some seeds jump up.
Then add the salt, roasted sesame, and peanuts into a mortar and pound them finely to make the sesame salt mixture. Depending on your preference, you can pound them very finely or just roughly so that the peanuts do not get too crushed.




Completion
When eating, use a knife to cut the bamboo tube into small pieces, then separate the rice inside and dip it in a bowl of sesame salt to enjoy!
