How to choose fresh ripe mangoes
- Choose fruits with evenly yellow skin, not soft or wrinkled.

How to Make Mango Pie – Fried Cake with Mango Filling

Prepare the Mango
Peel the skin, then cut to obtain the mango flesh. Next, puree the diced mango flesh until smooth.
For the mango flesh attached to the pit, use a spoon to scrape it off and set it aside in a bowl.

Cook the mango sauce
Place a pan on the stove, add the blended mango, 200g of sugar, 57ml of lemon juice, and 1/4 teaspoon of salt. Stir well over low heat until the sugar is completely dissolved.
Next, mix 177ml of water with 90g of cornstarch, then gradually add it to the mango pan while continuing to stir.
Finally, add the grated mango, mix once more and then turn off the heat. Transfer the filling to a bowl, cover tightly with plastic wrap, and let it cool completely.

Mix and knead the dough for the crust
Add 600g of flour, 200g of shortening, 10g of sugar, and 1 teaspoon of salt to a bowl, then mix well with your hands.
Next, add 158ml of water and continue kneading until the dough forms a uniform mass. Wrap the dough tightly in plastic wrap and refrigerate for 30 minutes.

Beat 1 chicken egg to prepare for the wrapping process.
After 30 minutes, divide the dough into several equal parts and roll it thin. Next, place the filling in the center, brush a layer of egg around it, and then fold the edges of the dough over.
Use a knife to cut the edges of the dough evenly, then use a fork to press around the edges to seal them tightly, and it’s done.
