  • Fresh green mangoes just harvested will have a white powdery coating on the skin; you should prioritize buying these mangoes.
  • Do not buy green mangoes that are soft; these are mangoes that have been stored for a long time and are starting to wilt or are immature mangoes harvested early, which do not have the characteristic sour taste when eaten.

  • Blanch the mango

    Turn on the stove, boil 0.5 liters of water, when the water boils, add the mango and blanch for about 20 seconds, then immediately remove it and place it in a bowl of ice water and soak for 10 minutes to make the mango crisper.

    Turn on the stove over medium heat, add 200ml of water and 200g of sugar to the pot, stir evenly until the water starts to boil, then add 200ml of fish sauce, continue cooking until the water boils gently again for about 5 minutes before turning off the heat.
