Rice flour 150 gr Corn flour 40 gr Tapioca flour 40 gr Vegetarian sausage 100 gr Shiitake mushrooms 10 gr Wood ear mushrooms 10 gr (white and black) Lettuce 50 gr Garlic 5 gr Chili 4 pieces Green onions 10 gr Water 600 ml Vegetarian seasoning 1 tablespoon Salt 1/2 teaspoon Sugar 2 tablespoons Lemon juice 1 tablespoon Pepper 5 gr

  • Choose mushrooms that are medium-sized, tightly closed, and have a brownish-yellow color.

  • Choose large ears, thick caps, and stems with few small ears.
  • The top of the mushroom should have a dark amber color and a slight sheen; the underside should be a color similar to milk coffee.
  • Avoid choosing mushrooms that are moldy.

How to prepare Vegetarian Rice Noodle Rolls

  • Prepare the ingredients

    You proceed to prepare the ingredients for the vegetarian rice noodle rolls as follows:

    • Vegetarian sausage: shredded.
    • Wood ear mushrooms and shiitake mushrooms: soak in water until expanded, then shred.
    • Green onions: wash and chop finely.
    • Garlic and chili: minced.

  • Make the rice noodles

    Mix the rice flour, cornstarch, and tapioca flour in a large bowl, then add 600ml of water and stir well. After that, use a sieve to filter the mixture about 2 times to make the rice noodle batter smooth.

    Next, add 1/2 teaspoon of salt, stir well, and cover to let it rest for 2 hours.

    After the batter has rested for 2 hours, remove the clear water that appears on the surface, while adding an equivalent amount of water, stir well then cover and let it sit for another 2 hours. Repeat this process 2 more times to make the rice noodles chewier and avoid any unpleasant smell.

    Finally, add 1 tablespoon of cooking oil to the rice noodle batter, stir well and steam the noodles.

    Sauté finely chopped green onions in hot oil, then add vegetarian sausage, wood ear mushrooms, and shiitake mushrooms (prepared) and stir-fry evenly with seasoning.

    Tip: You can substitute various types of mushrooms (with a chewy texture), and tofu skin to make the filling for the spring rolls, but ensure that the filling has a chewy and crispy texture.

    Place a piece of rice noodle on a clean flat surface, then add lettuce, coriander, filling, and roll tightly.
