Prepare the ingredients
Soak the vegetarian pork slices in cold water for about 30 minutes to soften. Rinse with water and squeeze dry.
Heat a pan on the stove over low heat, add about 5 – 6 tablespoons of oil, wait for the oil to heat slightly, then add the vegetarian pork slices and fry until lightly golden on both sides, do not fry until crispy to maintain the chewy texture of the vegetarian slices.
Cut the vegetarian pork slices into bite-sized pieces.
Clean the onion and cut into small wedges. Clean the scallions and chop them finely.
Roast the peanuts and crush them into halves or thirds.
Remove the seeds from the cucumber and shred it finely. Clean the accompanying vegetables and let them drain.
Tip:
If you prefer soft vegetarian pork slices, you can leave them un-fried.

Stir-fry the onions and vegetarian pork
Heat a pan on the stove over medium heat, add about 2 tablespoons of cooking oil, add about 3/4 of the scallions to sauté until fragrant, then remove to a bowl (to make scallion oil), leaving some scallions and oil in the pan to stir-fry the vegetarian pork slices.
Add the vegetarian pork slices to the pan and stir-fry evenly to avoid burning.
Season with 1 teaspoon of sugar, 1 teaspoon of vegetarian seasoning, and 1/2 teaspoon of vegetarian fish sauce.
When the vegetarian pork slices are firm and absorb the seasonings, add the chopped onion to the pan, along with the crushed peanuts, and stir-fry for about 2 minutes until the ingredients are cooked evenly. Add the remaining scallions, stir well, and turn off the heat.
Tip:
Sauté the onions just until cooked but not for too long to maintain their crispness and sweetness.

Make dipping sauce for stir-fried noodles with vegetarian pork
Depending on your preference, you can mince the amount of garlic and chili to your taste.
Add 2 tablespoons of fish sauce, 1 tablespoon of sugar, 1 tablespoon of lemon juice into a bowl, add minced garlic and chili, and stir well until the mixture dissolves.

Place the noodles on a plate, serve with fresh vegetables, shredded cucumber, stir-fried vegetarian pork slices, add some scallion oil and sweet and sour fish sauce to finish.
