How to make Shrimp Porridge with Water Spinach and Sweet Potato

Prepare the vegetables
Peel the sweet potatoes you bought, wash them clean, and let them drain.
Then, cut the sweet potatoes into pieces, and steam them in a steamer for about 10 – 15 minutes until they are soft. Next, place the sweet potatoes in a bowl and mash them with a spoon.
For the water spinach, pick the leaves, wash them clean, and then chop them finely.

Prepare and stir-fry shrimp
Wash the shrimp thoroughly, put them in a pot to boil for about 5 – 7 minutes until cooked. Then, peel the shrimp and remove the back vein, then chop finely.
Next, heat a pan, add 1 teaspoon of cooking oil, add 1 small onion chopped finely, sauté until fragrant, then add the chopped shrimp to the pan, stir-fry for about 1 – 2 minutes.

Cook the porridge
Rinse about 2 tablespoons of rice, then put the rice in a pot, add 14 tablespoons of water (in a ratio of 1:7), cook over medium heat for about 20 – 25 minutes until the porridge is soft.
Next, add the previously stir-fried shrimp into the pot of porridge, cover the lid, and cook over low heat for about 5 – 7 minutes.
Then add the mashed sweet potato, stir well to prevent lumps, and continue to cook for another 5 – 7 minutes.
