Annatto oil A little Minced onion/garlic A little Shrimp 300 gr Carrot 200 gr Rice paper A little Sugar 2 tablespoons Seasoning powder 1 tablespoon Monosodium glutamate 1/2 tablespoon Fish sauce 1 tablespoon

How to Cook Rice Paper Bánh canh

  • Prepare the ingredients

    Shrimp should be washed, cleaned of the shrimp vein, peeled, and the head removed.

    Peel the carrot, wash it, and then cut it into bite-sized pieces.

  • Prepare the broth

    You place a pot on the stove, turn on the heat to low, and add annatto oil along with minced onion and garlic to sauté until fragrant. Then, you add the cleaned shrimp and carrot, stir well until the ingredients are partially cooked. Next, you add about 1 bowl of water to the pot and boil for about 15 – 20 minutes.

    When the broth starts to boil, you gradually season it with 2 tablespoons of sugar, 1 tablespoon of seasoning powder, 1/2 tablespoon of monosodium glutamate, and 1 tablespoon of fish sauce, then use a spoon to stir well until the seasoning dissolves and continue to boil until the carrot is tender.

  • Prepare the rice paper

    Choose thin rice paper, and use scissors to cut the rice paper into long strips of moderate size. Then, you place the rice paper into a bowl; when ready to eat, just pour the broth over it and you can eat without needing to soak the rice paper in water beforehand.

    The broth after cooking has an eye-catching color from the annatto, with a sweetness from the shrimp and carrot. When eating, you can ladle the broth over the rice paper and enjoy; the rice paper will soften and become chewy when it meets the hot water, making it very delicious. You can also enjoy it with fresh herbs and green onions to enhance the flavor of the dish.
