How to choose fresh shrimp

  • Fresh and delicious shrimp typically have a translucent appearance, not cloudy, with the head firmly attached to the body, no unusual fishy smell, and no sliminess.
  • Signs of fresh shrimp include tightly closed tails that are aligned, and the body is straight, while spoiled shrimp have a curved body shape.
  • Avoid selecting shrimp with a plump body but little meat, legs detached from the body, or roe leaking out because these are signs of spoiled shrimp that have been chemically treated.

How to choose safe chicken bones

  • Quality chicken bones will have a slight fishy smell, the surrounding meat will be a light pink color, without a rotten smell, and should not be slimy or have black spots.
  • If buying frozen chicken bones, pay close attention to the information on the product packaging such as the production date and expiration date. Parts of the bones that are close to expiration will not have a long shelf life and will not taste good when cooked.

  • Prepare the ingredients

    Pork and chicken bones after purchasing should be soaked in diluted saltwater for 15 minutes, then washed clean with water and drained. Place a pot on the stove, add water to the pot, wait for the water to boil, then add the meat and boil for about 5 – 7 minutes, remove and let cool, then slice thinly. Cut the chicken bones into bite-sized pieces.

    Next, add the quail eggs to the pot, boil for 5 minutes, remove and place in a bowl of cold water, wait for the eggs to cool and then peel. Peel the shrimp, wash them clean, then blanch them briefly in boiling water and drain. The fish cake is cut into bite-sized pieces about 1/2 finger thick.

    Next, wash the onion and white radish and let them drain. Peel the onion, cut it in half, peel the white radish, and cut it into pieces about 1 – 2 fingers long.

  • Make the broth

    Add onion, shallots, and white radish into a pot with 2 liters of filtered water. Next, add the chicken bones and simmer for 30 minutes over low heat. Season the pot with 2 spoons of salt, 1 teaspoon of seasoning powder, and 1 teaspoon of monosodium glutamate. Cook for about another 10 minutes and adjust the seasoning to taste before turning off the heat.

  • Stir-fry the shrimp

    Add 2 tablespoons of cooking oil, 1 teaspoon of annatto seeds into a pan, cook over medium heat until the annatto color dissolves, then add the shrimp and stir-fry briefly, continue by adding 1 teaspoon of salt, 1 teaspoon of seasoning powder into the pan and cook for about 5 minutes until the shrimp are cooked evenly on both sides, then adjust the seasoning to taste before turning off the heat and transferring the shrimp to a plate.

  • Final Product

    You put the noodle soup, fish cake, quail eggs, shrimp, and meat into a bowl, then add chopped green onions on top and pour the broth into the bowl to finish.
