How to choose fresh and delicious lobster
- The best lobsters are those that are still lively and swim around in the water. When holding the lobster, its body should bend and be able to flap strongly.
- Additionally, the lobster should have a sturdy and shiny shell, with bright and attractive colors. The claws should be clear blue, strong, unbroken, and move flexibly.
- You should also pay attention to the joint between the head and body. If the flesh bulges out too much, it means the lobster has been dead for quite a while and is no longer fresh.
- Avoid choosing lobsters that are slimy and have a strong, foul odor as those are no longer usable.
Hong Kong salt can be easily purchased at food stores, large supermarkets, or ordered online. You can also make Hong Kong salt at home to ensure safety and suit your family’s taste.
How to cook Salted Lobster

Prepare the ingredients
Remove the stem and seeds from the bell pepper, wash it clean, and cut it into small cubes. Peel and finely chop the garlic.

Prepare the lobster
First, flip the lobster over and use scissors to pierce the meat near the head to make it easier to prepare the lobster.
Then, cut off the fins, flip the lobster back, and make a cut down the middle of the shell from the tail to the head, then gently bend to separate the body and head.
For the body, simply remove the shell that you just cut.
Tip:- Lobsters are very sharp, so be careful when preparing them.
- The lobster shell is very hard, so use relatively sturdy and sharp scissors for easier cutting.
- To avoid losing the nutrients of the lobster, do not rinse it with water after preparing.

Marinate and fry the shrimp
After preparing the shrimp, sprinkle 2 tablespoons of crispy flour evenly over the shrimp meat.
Next, place a pan on the stove with 500ml of cooking oil over medium heat. When the oil is hot, add the lobster and fry until golden brown on both sides for about 10 – 15 minutes. Then remove the shrimp and let them drain oil.
Tip:- To make the shrimp look appealing during the marination process for the head part, gently separate the head without being too forceful.
- To prevent the shrimp from burning while frying, avoid using too high a flame, and ensure the oil is deep enough to submerge the shrimp.

Sautéed Lobster with Salt
Take another pan with 2 tablespoons of cooking oil and minced garlic, sautéing until fragrant over medium heat.
Then add bell pepper and stir-fry for 2 – 3 minutes, followed by the lobster and 2 tablespoons of Hong Kong chili salt, continuing to stir for 3 – 5 minutes until well absorbed, then turn off the heat and serve on a plate.
Tip:- To ensure the lobster absorbs the seasoning evenly, use a pan with a relatively deep base, which will make it easier to stir the lobster.
- Salt is very easy to burn, so to avoid affecting the flavor of the dish when adding salt, stir quickly and do not leave it on the stove for too long.
