- You should choose live lobsters that are swimming; if you can’t find live ones, observe the points below to select good lobsters.
- The lobster’s body should be firm, the shell should be hard, and the color should be bright and clear, not cloudy or turning red or yellow.
- The head must be tightly attached to the body. If the joints are close together without any meat bulging out, it means the lobster has just died, and the meat will still be good.
- The claws should be intact, with no fishy or spoiled smell.
How to choose fresh carrots
- Fresh, delicious carrots should be of moderate size, straight and tapered towards the tail, with a smooth skin, firm to the touch, and slightly hard.
- Choose carrots that are bright orange in color, with fresh green tops still firmly attached to the root.
- Do not choose carrots with wilted or bruised tops or those that show dark spots.

How to prepare Lobster Soup

Prepare and steam the lobster
Scrub the lobster shell with a brush and rinse with water. Clean the lemongrass and ginger, then smash them.
Place a pot on the stove over medium heat, add 1 can of beer, lemongrass, ginger, and steam the lobster for about 7 minutes, then remove the lobster and soak it immediately in a bowl of ice water to firm up the shell.
Take the lobster out of the ice water, pat dry with a paper towel, and gently squeeze to detach the shell from the lobster meat.
Next, use scissors to cut down the middle of the lobster, from the head to the edge of the tail.
Then, gently pull the entire shell away from the lobster meat, tearing the lobster meat into bite-sized pieces.
Tip:- If you don’t like the beer flavor, you can use plain water or fresh coconut water instead.
- Lobster should only be steamed until just cooked to make peeling easier.

Prepare other ingredients
Remove the outer husk from the corn, wash it clean, and microwave on medium for 6 minutes or steam for 10 minutes until cooked, let it cool a bit, and separate the kernels.
Shiitake mushrooms are washed clean, soaked in cold water for about 1 hour, then boiled for about 10 minutes until cooked, removed to cool a bit, drained, and cut into thin strips.
Wash the carrots, peel them, and briefly boil for about 5 minutes, let them cool a bit, and dice them.
Crack the eggs into a bowl and beat well with chopsticks. Dissolve 1 tablespoon of tapioca starch in 50ml of water.
Green onions and coriander should have the old roots removed, washed clean, and chopped finely.
Tip:- You should microwave or steam the corn to retain its natural sweetness.
- Boiling the carrot first helps make dicing easier and more aesthetically pleasing.

Cooking Lobster Soup
Place a pot on the stove over medium heat and add 1 tablespoon of cooking oil, heating it up. When the oil is hot, add corn and shiitake mushrooms to sauté until fragrant.
Add 500ml of water and bring to a boil. Once the water is boiling, add carrots and shrimp, cooking for 3 – 5 minutes.
Season with 1 tablespoon of seasoning powder, 1/2 teaspoon of salt, 1 teaspoon of sugar, 1 teaspoon of monosodium glutamate, and adjust the taste to your liking.
Lower the heat and slowly add the tapioca starch water to the soup pot while stirring continuously.
Then gradually add the eggs, stirring well to create egg strands in the soup. Continue stirring until the soup thickens, then turn off the heat. Ladle the soup into a bowl and sprinkle ground pepper and chopped scallions on top.
Tip:- The purpose of adding tapioca starch to the soup is to create thickness and flavor for your dish.
- If you don’t have tapioca starch, you can substitute it with cornstarch or potato starch as you prefer.
