How to choose fresh and tasty chicken
- For this five-spice roasted chicken, you should choose chicken thighs and wings to prevent drying out while roasting.
- Choose chicken meat that is pinkish-red in color, with light yellow, smooth skin, firm to the touch, and press gently on the meat to feel its elasticity.
- Avoid choosing chicken that has loose skin and meat, a foul smell, or is slimy.
- Avoid choosing chicken that is dark in color, bruised, or has blood clots.

How to Make Five-Spice Grilled Chicken

Prepare the chicken and ingredients
To eliminate odors and clean, rub salt on the chicken and rinse several times with water. Then use a knife to make diagonal cuts on the chicken so that the marinade penetrates better.
How to clean chicken without odor
- You can use a mixture of liquor and sliced ginger, gently rubbing and massaging the entire chicken again to help eliminate odors and dirt. Rinse well, and let it drain.
- Additionally, you can add lemon to the water and soak the chicken for 15 – 20 minutes. Then remove it, rinse under cold water, and let it drain.

Peel and wash the onion, then dice it.

Make the marinade sauce
Heat a pan and add 1 tablespoon of cooking oil. When the oil is hot, add 1/2 diced onion and 1 tablespoon of minced lemongrass to sauté until fragrant.
Next, reduce the heat and add 1/3 tablespoon of monosodium glutamate, 1/3 tablespoon of seasoning powder, 1/2 tablespoon of salt, 1/3 tablespoon of five-spice powder, 1 tablespoon of oyster sauce, 1 tablespoon of chili sauce, 1 tablespoon of ketchup, and 1/2 tablespoon of pepper, mixing everything well.
Finally, add 50ml of water to the pan and cook on low heat for about 3 – 4 minutes until the mixture thickens, then turn off the heat!

Marinate the chicken
Let the sauce mixture cool slightly, then pour it into a bowl with the chicken, mixing to ensure the seasoning is evenly absorbed.
Then, cover the bowl tightly with plastic wrap and place it in the refrigerator for about 2 hours before roasting.
Tip: To allow the chicken to absorb the seasoning evenly, turn the chicken every hour.

Grilling chicken
While waiting for the chicken to absorb the spices, you should stabilize the oven temperature at 250 degrees Celsius for 10 minutes.
Next, place the chicken in the oven at 200 degrees Celsius for about 15 minutes, applying another layer of marinade sauce.
After that, cover the oven and increase the grilling temperature to 230 degrees Celsius for an additional 5 minutes, then flip the chicken over, apply more marinade sauce, and grill for about 15 more minutes to finish.
Tip: To achieve a beautiful, shiny skin without drying out, make sure to brush the marinade sauce during grilling!
Finally, place the grilled chicken on a plate, and you’re done!
Note:
- You can dip the chicken in lime pepper salt, green chili salt, seafood dipping salt,… or you can make a special dipping sauce using the recipe below.
- Recipe for dipping sauce to accompany grilled chicken: In a pan, toast 1/2 tablespoon of white sesame seeds over low heat until fragrant, then add 1 tablespoon of soy sauce, 1 tablespoon of oyster sauce, 1 tablespoon of chili sauce, 1 tablespoon of ketchup, 1/3 tablespoon of sugar, and 1/2 tablespoon of cooking oil.
