Chicken 1 whole (about 1.5 kg) Unsalted butter 20 gr Parsley 4 sprigs Sage leaves 3 sprigs Thyme leaves 3 sprigs (thyme) Olive oil 4 tablespoons Lemon 1 piece Ginger 1 piece Onion 1 bulb Garlic 1 bulb White wine 2 tablespoons Salt/pepper to taste

How to choose fresh and delicious chicken

  • To make a delicious English-style roasted chicken, you should choose a chicken of moderate size and weight, around 1.2 to 1.5 kg. If the chicken is too small, it may be an immature bird, which won’t taste good. If the chicken is too large, it could be an old bird or one that has been injected with water.
  • Choose a chicken with a characteristic golden skin, thin skin that feels smooth to the touch and has good elasticity.
  • Next, examine the meat inside: if the chicken has a natural pink-red color, not too pale or too dark, and has few bruises or blood spots, it is a good chicken.
  • Chickens with slightly pale or darker grayish meat are those that died before being processed.

How to Make English Style Roasted Chicken

  • Prepare the Ingredients

    Sage leaves, thyme leaves, and parsley leaves should be washed, drained, and then chopped finely.

    Unsalted butter should be cut into thin slices about 1/3 of a finger thick.

    To release the aroma of the lemon while roasting, use the tip of a knife to poke around it.

  • Prepare the chicken

    You can buy a whole chicken that has been prepped for making grilled chicken, but you need to pluck the feathers cleanly and eliminate any unpleasant odors.

    To remove the smell from the chicken, use a piece of ginger crushed, mixed with 1 tablespoon of coarse salt and 2 tablespoons of white wine, and rub it thoroughly over the chicken for about 5 – 10 minutes, both inside and out.

    Rinse it thoroughly with water and use a knife to separate the skin from the chicken breast (without detaching it completely).

    • Remove any remaining fat and blood clots inside.
    • Don’t forget to cut off the oil gland that causes the unpleasant smell in the dish.
    • After rubbing the chicken thoroughly, rinse it with water until it is completely clean.
    • If you don’t like using ginger, you can mix vinegar with salt in sufficient amounts. Then, rub both inside and outside the chicken thoroughly several times, so it won’t smell anymore.

    Add the chopped herbs to a bowl, then add 1 tablespoon of salt, 1 teaspoon of pepper, and 3 tablespoons of olive oil, stirring well to dissolve the salt.

    Crush the garlic and cut it in half, slice the onion by removing the ends and cutting it into bite-sized pieces about 1 finger length.

    To stabilize the oven temperature, preheat the oven for 10 minutes at 200 degrees Celsius.

    Place the chicken in the oven at 200 degrees Celsius with top and bottom heat for 60 minutes until the skin is golden and crispy, then remove the chicken and let it rest for about 15 minutes to cool slightly.
