Ingredients for English-style Roasted Chicken Serves 4
Chicken 1 whole (about 1.5 kg) Unsalted butter 20 gr Parsley 4 sprigs Sage leaves 3 sprigs Thyme leaves 3 sprigs (thyme) Olive oil 4 tablespoons Lemon 1 piece Ginger 1 piece Onion 1 bulb Garlic 1 bulb White wine 2 tablespoons Salt/pepper to taste
How to choose fresh and delicious chicken
- To make a delicious English-style roasted chicken, you should choose a chicken of moderate size and weight, around 1.2 to 1.5 kg. If the chicken is too small, it may be an immature bird, which won’t taste good. If the chicken is too large, it could be an old bird or one that has been injected with water.
- Choose a chicken with a characteristic golden skin, thin skin that feels smooth to the touch and has good elasticity.
- Next, examine the meat inside: if the chicken has a natural pink-red color, not too pale or too dark, and has few bruises or blood spots, it is a good chicken.
- Chickens with slightly pale or darker grayish meat are those that died before being processed.

Parsley:
- Parsley is known in Vietnamese as rau mùi tây or ngò tây, and is a commonly used herb in culinary practices. There are two main types of parsley: flat-leaved and curly-leaved.
- It has naturally curly leaves and flat leaf surfaces, but its leaves are usually dark green, thicker, and larger than the Vietnamese coriander.
- It is a widely used herb in cooking, especially in Middle Eastern, European, and North American cuisines.
Thyme leaves:
- Thyme leaves, also known as cỏ xạ hương, are a type of herb commonly used in cooking, medicine, and landscaping.
- They originate from southern Europe, from the western Mediterranean to southern Italy. In Vietnam, the plant is mainly grown in temperate climates such as Da Lat and Sapa.
Sage:
- Sage, known as cây xô thơm, is a popular herb used in cooking worldwide.
- However, due to its wild and pungent aroma, sage is only used in small amounts.
- It is a member of the mint family, with its relatives including oregano, rosemary, basil, and thyme.

How to Make English Style Roasted Chicken
-
Prepare the Ingredients
Sage leaves, thyme leaves, and parsley leaves should be washed, drained, and then chopped finely.
Unsalted butter should be cut into thin slices about 1/3 of a finger thick.
To release the aroma of the lemon while roasting, use the tip of a knife to poke around it.
-
Prepare the chicken
You can buy a whole chicken that has been prepped for making grilled chicken, but you need to pluck the feathers cleanly and eliminate any unpleasant odors.
To remove the smell from the chicken, use a piece of ginger crushed, mixed with 1 tablespoon of coarse salt and 2 tablespoons of white wine, and rub it thoroughly over the chicken for about 5 – 10 minutes, both inside and out.
Rinse it thoroughly with water and use a knife to separate the skin from the chicken breast (without detaching it completely).
Tips to remove the smell from chicken:- Remove any remaining fat and blood clots inside.
- Don’t forget to cut off the oil gland that causes the unpleasant smell in the dish.
- After rubbing the chicken thoroughly, rinse it with water until it is completely clean.
- If you don’t like using ginger, you can mix vinegar with salt in sufficient amounts. Then, rub both inside and outside the chicken thoroughly several times, so it won’t smell anymore.

Prepare the marinade and marinate the chicken
Add the chopped herbs to a bowl, then add 1 tablespoon of salt, 1 teaspoon of pepper, and 3 tablespoons of olive oil, stirring well to dissolve the salt.
Next, take 1/3 of the marinade and rub it under the skin evenly, adding some unsalted butter as well.
Rub the remaining marinade evenly inside and outside the chicken, placing the lemon inside the chicken’s cavity, and using string or twine to secure it.
-
Make the garlic sauce
Crush the garlic and cut it in half, slice the onion by removing the ends and cutting it into bite-sized pieces about 1 finger length.
Then add 1 tablespoon of olive oil, 1 teaspoon of salt, mix well, and place it in the roasting tray.
-
Roast Chicken
To stabilize the oven temperature, preheat the oven for 10 minutes at 200 degrees Celsius.
Place the chicken in the oven at 200 degrees Celsius with top and bottom heat for 60 minutes until the skin is golden and crispy, then remove the chicken and let it rest for about 15 minutes to cool slightly.
-
Final Product
The roast chicken is golden yellow, with a crispy exterior and juicy interior, fragrant and delicious.
When eating roast chicken, dip it in salt and pepper, and you can squeeze a little lemon or calamondin to enhance the flavor. Don’t forget to serve it with a bit of pickled vegetables, and you’ll have a dish that will make you forget the way back home!
Tips for successful execution
- When baking, you must pay attention not to let the temperature in the oven get too high, causing the chicken to burn.
- After cooking, you should wait a moment for the heat to lessen before taking it out of the tray.
- Additionally, if the dish is done before the set time, you can manually turn off the pot by adjusting the timer knob to 0.
