How to Make Stir-Fried Noodles with Eggs

Prepare the Ingredients
The noodles you bought should be soaked in cold water for about 20 minutes until soft, then drained and rinsed with water.
Chop off the roots of the scallions, wash them clean, and cut them into small pieces. Crack 2 eggs into a bowl, and use chopsticks to beat them well.

Fry the Eggs and Stir-Fry the Noodles
Heat a pan and add 1 tablespoon of cooking oil. When the oil is hot, add the eggs and fry for about 4 – 5 minutes until both sides are golden brown. Remove to a plate and let cool slightly, then cut into thin strips about 1/2 the width of a finger.
Next, using the same pan where you fried the eggs, add 1 tablespoon of cooking oil, the soaked noodles, 1 tablespoon of oyster sauce, and 1 tablespoon of soy sauce, then stir-fry for about 5 minutes until the noodles are soft and have a beautiful golden-brown color.
Then, add 1/2 teaspoon of seasoning and 1/2 teaspoon of monosodium glutamate, stir well to dissolve the seasonings, then add the eggs back in. Taste and adjust the seasoning if needed, then add the scallions, stir for an additional 30 seconds, and turn off the heat.
Finally, plate the dish; you can sprinkle a little ground pepper on top if you like.
