Prepare the lobster
First, turn the lobster over and use a scissors to stab in the middle of the meat close to the head to kill the lobster, making it easier to prepare.
Then cut off the fins, turn the lobster back over, and make a cut down the middle of the shell from the tail to the head, then gently pull apart the body and head.
For the body, you just need to remove the shell that you’ve just cut.
