How to choose fresh local chicken
For live chickens
- You can hold two chickens of the same size; if one feels heavier, its meat will be firmer.
- Choose chickens with a bright, sharp beak that is not slimy.
- Prefer chickens with slender legs that are straight, without scratches or broken nails, and without unusual red spots on their legs.
- Choose chickens with soft, thin skin; when lightly pressed, it feels firm, not mushy. Additionally, you will notice some yellow streaks under the breast and wings, with visible meat under the armpit and chicken wings.
- A healthy chicken is one where the crop is not tight.
For processed chickens
- Good chickens will have a compact, firm body and a small breast. The skin should be golden yellow, with darker yellow areas like the wings, breast, and back, and should not have any dark bruises or black spots. The meat should not smell spoiled or foul.
- If the chicken skin is tough, evenly golden, but the fat is white, it indicates that the chicken has been treated with chemicals.
- Press the meat with your hand to check; if the meat is firm, it is good chicken. If the meat is mushy, slippery, deformed, or dented, do not buy it to avoid health issues.

- You should choose sticky rice grains that are uniform, glossy, and have an opaque white color. When you smell them, you can sense a light fragrance of freshly harvested rice.

- Additionally, you should buy sticky rice from reputable shops or supermarkets to feel more assured about the quality.
- You should not buy sticky rice if the grains have turned light yellow or if you smell a strong fragrance, as this type of sticky rice may have been treated with chemicals.
How to prepare Steamed Chicken with Sticky Rice

Prepare the ingredients
The sticky rice you buy should be rinsed 2 – 3 times with water, then mixed evenly with 1 tablespoon of turmeric powder, and soaked in water until just covered for about 1 hour.
Next, drain the sticky rice and let it dry, add 2 tablespoons of cooking oil, and mix well.
Tip: Mixing the sticky rice with a little cooking oil before steaming helps the rice to expand evenly, fluffy, and look beautiful.For ginger, peel, wash it clean, then slice it thinly and put it into a small bowl. Heat 1 tablespoon of cooking oil until hot, then pour it over the sliced ginger, and use this mixture to massage the chicken for about 15 minutes.

Steam sticky rice with chicken
You place 2 pieces of cleaned banana leaves on the tray and then spread the sticky rice evenly on top. You place the piece of chicken on the second tray and then put it into the Kalite STEAM PRO air fryer combined with steaming. The chicken tray will be on top of the sticky rice tray.
Next, you fill the water in the water collection tray of the oven, close the oven lid, and select the steaming function for 35 minutes.
Tip: If you do not have an air fryer with a steaming function, you can replace it with a 2-tier steaming pot, one tier for steaming chicken and one tier for steaming sticky rice. The steaming time is about 30 – 40 minutes. -
Make pickles to serve
You wash the cucumber and carrot really well, let them dry and then cut them into bite-sized pieces. The herbs should be washed and then chopped finely.
You put the ingredients into a bowl and then add 1/4 teaspoon of salt, a bit of ground pepper, the juice of 2 calamondin limes, and 1/2 teaspoon of sugar, then mix well, and adjust the seasoning to suit your family’s taste.

Prepare the dipping sauce
To prepare the chicken dipping sauce, you put 1 teaspoon of monosodium glutamate, 1 tablespoon of chili sauce, 1 tablespoon of lime juice, 1 tablespoon of filtered water, a little pepper, a little shredded kaffir lime leaves, and 1 sliced lime into a bowl. Mix well until you have a thick mixture.
Heat a pan on the stove, add 3 tablespoons of cooking oil and bring to a boil, then add sliced shallots and fry until golden and crispy, then remove and drain the oil.

Second steaming
After steaming for 30 minutes, take the sticky rice tray out and mix it with 4 tablespoons of coconut milk, stir well, and then put it back into the steamer for about 5 more minutes along with the chicken tray.
After 35 minutes, both the chicken and sticky rice are cooked, then you arrange them on a plate, add a little pickled vegetables, and decorate it nicely to finish.
Tip: If you are using a two-tier steamer, then at this step, after steaming for 30 – 40 minutes, take the sticky rice out and mix it well with the coconut milk. After that, you can steam the sticky rice for the second time for about 5 – 10 minutes. -
