- The experience of selecting good chicken is to look at the condition and color of the chicken meat: if the skin is shiny, with a natural pink color or thin skin with a light yellow color, while the breast, wings, and back are slightly dark yellow, then it is definitely good chicken.
- You should choose parts of the chicken that do not have strange smells, and the skin should not be purple or have bruises.
- Try pressing lightly to check the chicken’s firmness; good chicken should have firm meat, not soft.
- Check the breast, belly, and wings; if there are small red spots, you should not buy it.
How to choose delicious ginger
- Good ginger has smooth, shiny skin, few veins, and is easy to peel.

You should buy ginger that, when broken, shows a lot of fiber, round veins, and a bright yellow color.

Avoid choosing ginger that is too young as it lacks firmness and richness; if ginger is too old, it has too much fiber and a pungent taste that makes it less enjoyable.

- Good lemongrass has a distinctive aroma, with large and uniform bulbs.
- You should choose lemongrass with a thick and round base, with a purple-green color.
- Avoid choosing lemongrass that only has a straight, white stem, as it will be less fragrant.

How to make steamed ginger lemongrass chicken

Prepare the ingredients
First, wash all the ingredients thoroughly with water.
After washing the chicken, use salt to rub it, then rinse again with water and let it drain.
Slice the ginger and julienne it, smash the red onion and chop it finely, also julienne the lime leaves, and cut off the leaves of the lemongrass, keeping only the bulbs, then slice and chop them finely.
Cut the green onion into sections, leaving the bulbs cut in half.

Seasoning and Steaming Chicken
You put ginger, lemongrass, shallots, 3 teaspoons of seasoning, and 2 teaspoons of pepper into a bowl and mix well.
Then, you rub the mixture on the outside and inside of the chicken, ensuring the entire chicken is infused with the seasoning and marinate for 10 – 15 minutes.
Next, you place the chicken on a plate and arrange the ginger, lemongrass, and lime leaves on top so that the ingredients cover the surface of the chicken.
Then put the plate of chicken into a steaming pot and steam it for 20 – 25 minutes.
Mix together 1/2 tablespoon of cooking oil and 1/2 teaspoon of turmeric powder and stir well.
When the chicken is cooked, you brush this mixture all over the chicken. Continue steaming for another 3 – 5 minutes to finish.
