How to choose good kumquats
- You should choose ripe kumquats with a yellowish skin, plump and juicy; when squeezed, they feel slightly soft and have essential oils. These are fresh kumquats.
- Choose kumquats that are evenly shaped, not misshapen. These kumquats usually contain more juice.
- Avoid choosing those with green skin, as they will be bitter when cooked and hard to eat. Additionally, do not select bruised, overripe, or moldy fruits.
How to prepare Tắc steamed with rock sugar

Pre-process tắc with salt
To clean off dirt, after purchasing, wash the tắc briefly with water.
Next, put the tắc in a bowl, add 1 spoon of clean water and 3 tablespoons of coarse salt, then use your hands to roll and rub for about 5 minutes, then rinse the tắc 2 – 3 times with water and let it dry.
Tip:- Rubbing tắc with salt helps the tắc peel release less sap and reduces bitterness.
- Additionally, you can soak the tắc in diluted salt water for about 30 minutes before cooking.
After cleaning the tắc, use a knife to cut it in half or into thirds depending on the size.

Marinate the kumquats
Put the kumquats in a stainless steel bowl, then add 100g of rock sugar and 50ml of filtered water, and let it sit for about 5 minutes for the sugar to soak into the kumquats.
Tip:- You should use a bowl made of clay, porcelain, or glass for steaming the kumquats as they can withstand high pressure.
- Avoid using plastic bowls because at high temperatures and with the acid in the kumquats, the plastic may release some harmful substances, affecting both your health and the flavor when consumed.

Steam the kumquats
Add 100ml of filtered water to the pot, then place the bowl of marinated kumquats with rock sugar inside. Cover it and steam on low heat for about 20 – 30 minutes until the rock sugar is completely dissolved and the kumquats turn a beautiful orange color.
