- Fresh shrimp have a translucent shell, straight body shape, slightly curled tail, and the head, tail, and legs are firmly attached to the shrimp body. Additionally, when holding the shrimp, it feels firm and does not have a foul smell.
- Do not buy shrimp that are soft and mushy, have a cloudy color, loose head and legs or black color, or shrimp that smell rotten, have curved bodies, or leak strange fluids should also not be purchased.
How to prepare Dry Vermicelli with Shrimp

Prepare the ingredients
The dry vermicelli bought should be placed in a basket and rinsed through 2 times with water, then put into a pot of boiling water for about 5 minutes over medium heat until soft, then remove the vermicelli and soak it in a bowl of cold water. Once the vermicelli has completely cooled, drain it in the basket.

Next, put the shrimp into an pan and sauté with 1 tablespoon of cooking oil over high heat. When the shrimp turns red, it’s done (you can also boil or steam the shrimp until cooked).

- Alternatively, you can bend the shrimp’s head and gently squeeze from the shrimp’s tail to expose the gut, then hold the gut and gently pull to remove the vein.

Make the sauce and mix the noodles
In a bowl, combine and mix well the ingredients including 2 tablespoons of fish sauce, 2 tablespoons of sugar, 4 tablespoons of water, 1 tablespoon of lime juice, minced garlic, and chili.
Add the noodles and shrimp into the bowl along with the sauce mixture, add 2/3 of the fried shallots, and gently mix to let the noodles absorb the flavors.
Next, take the amount of shrimp noodles that you want to serve onto a plate, sprinkle with fried shallots, crushed peanuts, a bit of herbs, cilantro, and a little ground pepper, and you can enjoy it.
