Cá thác lác 100 gr Cải bẹ xanh 300 gr Hành lá 5 stalks Ngò rí A little Dầu ăn 2 tablespoons Common seasonings A little (salt/ sugar/ seasoning powder/ monosodium glutamate/ pepper)

How to choose fresh ingredients

How to choose fresh cải bẹ xanh

  • Choose stalks of cải that have a bright green color, feel firm to the touch, and are crisp and easy to break.
  • Avoid choosing wilted, yellowing stalks with signs of pests on the stems and leaves. Especially avoid choosing cải that has bolted, as it will be old, very pungent and strong.
  • It’s best to go to the market or supermarket in the morning to pick the freshest green cải.

How to choose good cá thác lác

  • For fresh cá thác lác: Choose fish with clear eyes, shiny scales, firm flesh, and thick body for easier scraping of meat.
  • For pre-processed cá thác lác: choose fish meat that is bright, pink or light pink, not discolored or pale green, and has no strange smell.
  • If you buy pre-packaged fish meat, choose those with intact packaging, closest expiration date, and purchase from reputable places.

How to make Green Mustard Soup with Snakehead Fish

  • Prepare the ingredients

    First, wash the green mustard thoroughly, drain, and cut into pieces about 1 finger length.

    Chop the green onions to get the green part and pound it together with 1 teaspoon of ground pepper.

    Coriander should be washed and chopped finely.

    For the snakehead fish, mix it with spices including: half of the pounded green onion, 1 tablespoon of seasoning powder, 1 tablespoon of sugar, 1/2 tablespoon of salt, and 1 teaspoon of monosodium glutamate.

    Then use a mortar and pestle to pound evenly; the more you pound the fish, the longer and tastier it will be.

  • Cooking the soup

    Next, you boil 800ml of water and add in half of the remaining crushed onion.

    Then use a spoon or your hands to roll the fish into balls and drop them into the pot.

    When the water boils again, add the mustard greens.

    Season with 1 tablespoon of salt, 2 tablespoons of seasoning powder, 1 tablespoon of sugar, and 1 teaspoon of monosodium glutamate, then stir well until the water boils, taste and adjust seasoning as needed, then turn off the heat.

    Serve the soup in a bowl, add a little cilantro, and enjoy!
