Choose taro roots that are medium-sized, fresh, and feel solid in hand. Large ones will be fibrous, while small ones may be hard. Avoid those that are bruised, crushed, or have dark spots, as these are damaged roots.
How to choose fresh bananas
It is advisable to choose bananas that are not uniformly colored (some ripe, some still green) and have some brown spots on the peel.
Naturally ripened bananas will ripen from the stem down to the body. Do not choose bananas that are ripe at the tip but still green at the stem, with a shiny, beautiful yellow color. These may be bananas that have been chemically treated.
Avoid buying bananas that are bruised, overly soft, or have cracked skins.
How to choose fresh mangoes

How to Make Bobo Chacha

Prepare the Ingredients
Wash the ingredients thoroughly, peel the sweet potatoes, bananas, and mangoes, and cut them into 1 – 2 cm pieces.
For the beetroot, peel it and set aside about 20 grams to make soft beetroot balls.
Soak the tapioca pearls in water for about 30 minutes to let them swell.

Steam the Potatoes
Put the sweet potatoes and taro into the steamer for 10 minutes.
After cooking, peel the taro and cut it into bite-sized pieces.

Making chewy beetroot balls
Add 20g of beetroot with a little water into the blender and blend until smooth, then strain to extract the juice.
Place a pot on the stove and heat the beetroot juice to 80 degrees Celsius, then slowly pour it into 100g of tapioca flour, using your hands to knead it into a dough. After that, coat the dough with a layer of tapioca flour and roll it into small balls.
Boil a pot of water, then add the beetroot balls and cook until done; the cooked beetroot balls will be slightly translucent and float on the surface of the water, with a cooking time of about 15 minutes.
After boiling, take the beetroot balls out and place them in a bowl of cold water to firm them up and achieve a chewy texture.
Tip: After boiling, you can add a little sugar and mix well, soaking for about 5 minutes to give the beetroot balls a sweeter and more delicious flavor. Then place the beetroot balls in cold water.
