How to choose fresh, quality freshwater crabs
- You should choose live crabs, with bright, shiny shells, with enough legs, and claws always pointing upwards when you catch them.
- You flip the crab over and press on the belly; if it doesn’t sink, it means the crab is firm.
- To distinguish between male and female crabs, look at the belly of the crab. If the belly is small, it’s a male crab, which will have more meat. If the belly is large, it’s a female crab, which will have more roe. You should choose according to your preference for male or female crabs.
- Avoid choosing crabs with red eyes, a hairy belly, or a shell with star-like spots, as these are signs of poor quality crabs. Also, do not choose crabs that sink when you press on their belly, as these are likely to be empty, with little meat, and often have been overcooked.

How to make Fermented Mud Crab

Prepare the ingredients
You use a loofah or a brush to scrub the crabs clean, to remove all the dirt and sand. Soak the crabs in diluted salt water for about 1 hour, then rinse with clean water and let them drain.

Boil the saltwater
You place a pot on the stove and turn on high heat, add 5 liters of water and bring to a boil. When the water boils, add 2 kg of salt and boil for another 3 – 4 minutes until dissolved, then turn off the heat and let it cool.
Tip: To successfully soak the crabs, you can use filtered water, tap water,… but do not use rainwater! -
Put crabs in a jar to marinate with brine
You place the drained crabs into the jar, evenly sprinkle 500g of salt over the crabs, and add the cooled brine until it covers the crabs.
Next, you close the jar tightly and keep it in a cool place, avoiding sunlight for about 7 days.

Separate the crabs
When the crabs have soaked for the sufficient time, you take them out of the brine.
Next, you remove the crab apron, separate the crab shell, and for large crabs, you can break them in half.
MTip: To make crab fish sauce, you can boil the brine with the separated crab shells, boiling for about a minute and then turn off the heat to complete the crab fish sauce. -
Pound garlic and chili
You peel the garlic, remove the stems from the chili, and wash them thoroughly. Cut the lemon in half and squeeze out the juice.
You pound the garlic and chili together with 1 tablespoon of sugar until fine.

Mix the sauce with garlic, chili, and lime juice
Next, add the crushed garlic and chili mixture to the crab meat, add lime juice, mix well, and season to taste, and you can enjoy it!
