How to Choose Fresh Anchovies
- Choose anchovies that are of moderate size, about 2 finger joints long, not too small or too large.
- Fresh anchovies will have transparent flesh, tightly closed mouths, and a fishy smell of the sea when smelled.
- Press your finger into the fish; if you feel the flesh is still firm and not mushy, then you should buy it.
- Do not choose anchovies that have flesh that has turned cloudy white, has a foul smell, or an unusual odor.

Prepping the Anchovies
After purchasing the anchovies, place them in a basket, rinse them under running water, and use your hands to stir them multiple times to clean.
Wash until the belly of the anchovies is clean, and the entire fish is clear of dirt, then set them out in the sun to dry.

Wash the bird’s eye chili and slice it thinly.
Put the anchovies in a basin, add 200g of salt, 50g of sugar, 5 tablespoons of dried chili along with the sliced bird’s eye chili, and then mix well.
