Anchovies 1 kg Salt 200 gr Sugar 50 gr Dried chili powder 5 tablespoons

How to Choose Fresh Anchovies

  • Choose anchovies that are of moderate size, about 2 finger joints long, not too small or too large.
  • Fresh anchovies will have transparent flesh, tightly closed mouths, and a fishy smell of the sea when smelled.
  • Press your finger into the fish; if you feel the flesh is still firm and not mushy, then you should buy it.
  • Do not choose anchovies that have flesh that has turned cloudy white, has a foul smell, or an unusual odor.
  • It is advisable to choose larger anchovies so that when fermenting, the fish sauce does not release water.

How to Prepare Anchovy Fish Sauce

  • Prepping the Anchovies

    After purchasing the anchovies, place them in a basket, rinse them under running water, and use your hands to stir them multiple times to clean.

    Wash until the belly of the anchovies is clean, and the entire fish is clear of dirt, then set them out in the sun to dry.

  • Marinate the anchovies

    Wash the bird’s eye chili and slice it thinly.

    Put the anchovies in a basin, add 200g of salt, 50g of sugar, 5 tablespoons of dried chili along with the sliced bird’s eye chili, and then mix well.

  • Ferment the fish sauce

    After mixing, put the fish sauce into a jar with both the solids and liquid, then press down.

    After putting the fish sauce in the jar, add another teaspoon of dried chili on top, then clean the mouth of the jar and seal it tightly.

    Store the fish sauce in a cool, dry place for about 15 – 20 days before it can be used.

  • Final Product

    The anchovy sauce is a beautiful golden color and fragrant, with a salty, slightly spicy taste that is incredibly appealing. This dish can be served with white rice or used as a dipping sauce, which is also very delicious.
