How to make Black Sticky Rice Yogurt
-
Making yogurt
Place a pot on the stove, add 1 liter of unsweetened fresh milk and 1/2 can of condensed milk (190gr) into the pot and simmer on low heat until the milk starts to bubble, then turn off the heat.
Next, pour the cooked milk into a clean bowl and let it cool slightly. When the mixture is warm at about 50 – 70 degrees Celsius, add 1 container of yogurt (100gr) and stir well.
-
Fermenting yogurt
Pour the yogurt mixture made above into small jars, then place the jars into the rice cooker. Next, pour warm water at about 80 degrees Celsius until it covers 2/3 of the yogurt jars, then close the rice cooker lid, turn on the warming mode for about 15 – 20 minutes, then unplug it.
After about 2 hours or when the water in the pot cools down, plug the cord back in, still keeping the warming mode for another 15 minutes. Repeat this process until the yogurt is fully fermented (about 6 – 8 hours).
-
Cooking black sticky rice
Wash the black sticky rice clean, then soak it in 500ml of warm water for 4 – 6 hours and then drain the water. After that, put the rice in a pot with 600ml of filtered water. Cook over medium heat until the water boils, then add the pandan leaves to cook together.
Continue cooking until the water is nearly gone, then remove the pandan leaves, add 100ml of coconut milk and 100g of brown sugar, stir well. Cook for another 15 minutes, taste to see if the black sticky rice is soft, then turn off the heat.

Finished Product
When the sticky rice has cooled down a bit, put it into a cup, drizzle yogurt over it, mix well, and enjoy. You can add ice cubes if you prefer it cold.
The chewy black sticky rice, fragrant and gently sweet, together with the creamy, refreshing yogurt creates an incredibly delicious and appealing flavor.

Prepare Ingredients
Before cooking, take the yogurt, unsweetened fresh milk and condensed milk out of the refrigerator and let it cool for about 10-15 minutes.
Put 1 can of condensed milk (380gr) into a large pot, then add 1 can of yogurt (100gr) into the pot and stir well. Next, add 440ml of unsweetened fresh milk into the pot and continue stirring until the mixture is smooth and thick.
-
Make and Ferment the Yogurt
Place a pot on the stove, add 550ml of water to the pot and bring to a boil. Once the water is boiling, slowly pour it into the pot containing the mixed milk mixture above, stirring continuously to blend the mixture together.
Next, strain the yogurt mixture through a sieve to make it smooth and then pour it into the pot. After straining, cover the pot with a cloth and put the lid on.
Tip: Using a cloth to cover the pot ensures that the steam soaks into the cloth instead of condensing on the pot lid and dripping into the mixture. Finally, place the pot in a dry and well-ventilated area and incubate the yogurt for about 12 hours. During the incubation, avoid moving the pot. Additionally, you can wrap the pot with a towel to ensure the yogurt ferments to achieve the best quality.

Cooking black sticky rice
Wash the black sticky rice thoroughly with water, then soak it in warm water at 40 – 50 degrees Celsius for about 3 – 4 hours.
After soaking the rice, rinse it with clean water, then add 1 teaspoon of salt and 1 teaspoon of sugar to the rice, and mix well.
Next, put the rice into a rice cooker, pour water about 2/3 of the pot, and cook until boiling. Once the rice boils, open the lid and stir well, then close the lid and continue cooking until the rice is fully cooked.
When the rice is cooked, add enough water to just cover the black sticky rice and switch back to the cooking mode; when the rice is cooked a second time, open the lid, stir well, then cover the lid again and let it sit for about 1 – 2 hours to soften the rice.
After 1 – 2 hours, add 30ml coconut milk to the pot and follow the previous two steps until the rice is cooked, then add 1/2 teaspoon of sugar to the rice cooker, stir well, and cover the lid, waiting for another 5 – 10 minutes to finish. You can adjust the amount of sugar to suit your taste.
