How to prepare Roasted Green Rice Cake

Make the syrup
You place a pan on the stove, add 100gr of sugar, 150ml of filtered water, and 1/2 bulb of julienned ginger into the pan, and stir well over medium heat. Cook until the sugar melts.

Mix the roasted rice
After the sugar has completely dissolved, pour 100g of roasted rice into the pan and mix well so that the rice is evenly coated with the ginger syrup.
Stir the rice continuously for about 5 – 10 minutes over medium heat until the rice sticks together and forms a candy-like consistency, then turn off the heat.

Pressing rice flakes
When the rice flakes have reached a certain level of stickiness, we will proceed to press the flakes into a mold. You use a square mold lined with plastic wrap underneath and start sprinkling a layer of peanuts and sesame seeds on top.
Next, you add the rice flakes into the mold and use a spoon or a mixing spatula to firmly press the rice flakes inside the mold.
Then, sprinkle a little more peanuts and sesame seeds on the surface of the pressed rice flakes and press down tightly once again. Let the rice flakes cool for about 1 hour, after which you will use a knife to cut the rice flakes into small rectangular pieces, just right for eating.
