How to Cook Green Rice Cake from Crispy Vermicelli

  • Soak and Dry the Vermicelli

    First, put 1kg of basin of fresh vermicelli, 1 tablespoon of salt, and just enough water to submerge the surface of the vermicelli. Then, soak the vermicelli for about 5 minutes.

    After 5 minutes, dry the vermicelli in the sun until it becomes hard.

  • Fry the crispy noodles

    Place a pan on the stove, add 500ml of cooking oil and heat it up.

    When the oil is hot, add the noodles and fry them until they are crispy, stirring continuously.

  • Cook ginger syrup and mix noodles

    Put a new pan on the stove, add 200ml of water, 500gr of sugar, and the juice of 1/2 lemon. Cook the mixture over low heat until the sugar dissolves.

    Next, add 1 sliced ginger and 1/2 teaspoon of salt. Continue to cook the ginger syrup over low heat until it turns light yellow.

    Then, add the noodles and stir well over the lowest heat until the syrup coats the noodles evenly.

  • Press the mold to make rice cake

    Prepare a mold or box lined with parchment paper, add the noodle mixture, and then use a press to flatten it evenly in the mold.

    Next, sprinkle 20gr of sesame evenly on top, press the cake flat once more, and then use a knife to cut into bite-sized pieces.

    Finally, just let the cake cool completely before enjoying.

    Tip: Cutting the cake while it’s still warm will be easier.
