How to Prepare Red Bean Sticky Rice Pudding

Prepare the red beans
After buying canned cooked red beans, pour them into a basket to drain all the liquid from the can and rinse with cold water once to clean the beans and eliminate the canned bean smell.
Tip:- You can use dried red beans to make the pudding; in this case, rinse the beans and soak them in a bowl with water for about 6 – 8 hours to allow the beans to swell.
- After soaking the beans, put them into the pot with 1.5 liters of water; however, the cooking time will be longer than for canned beans.

Cook the red beans
After draining the beans, put them into a pot along with 1 liter of water and 3 pandan leaves, then simmer over medium heat for 2 minutes before adding 180g of brown sugar and 1/2 teaspoon of salt.
Next, stir well until the sugar dissolves and cook for another 3 minutes.
Small tip: If using dried red beans, simmer the beans with 1 liter of water, cover, and cook over medium heat for about 25 – 30 minutes until the beans are soft. -
Stuffing sticky rice and forming balls
Add 150g of sticky rice flour to a bowl, then gradually add 110ml of warm water at about 50 degrees Celsius while stirring gently to combine the flour, then use your hands to knead until the dough is smooth and pliable.
Next, use your hands to break off pieces of the dough about the size of your thumb and roll them into balls.

Boiling sticky rice
Add 1.5 liters of water to a pot, place it on the stove and bring to a boil over high heat. Then, add the balls of dough one by one and boil until they float to the surface, indicating they are cooked.
Turn off the heat, remove the dough balls, and place them in a bowl of cold water for about 10 minutes, then remove and drain.

Cooking red bean sticky rice pudding
At this step, you reopen the pot of red bean pudding that has been simmering and add the freshly made sticky rice flour mixture, then continue to cook for another 5 minutes.
After that, add all 400ml (1 can) of coconut milk and stir gently for about 2 minutes before turning off the heat.
