How to choose fresh and delicious crab
For fresh crab
- When selecting crabs, look for a dull gray shell on the outside, press the crab’s belly with your hand to feel it is firm, a large belly indicates the crab has a lot of meat.
- Avoid choosing crabs that have greenish claws and shells, if pressing the belly feels soft, it indicates a watery, spongy crab with little meat, not tasty.
- You should choose crabs that are very fresh, with the belly still firmly attached to the body, legs and claws moving vigorously, and the spines on the claws and shell are still sharp.
- If you want to eat crabs with a lot of meat, choose male crabs; if you want to eat crabs with roe, choose female crabs.

Prepare the chicken and make the broth
Buy chicken, pluck the feathers, blanch it in hot water mixed with 120ml of vinegar for about 5 minutes, then take it out and wash it clean with water.
Add 3 liters of filtered water into a pot, add a cleaned onion, peeled and cut into quarters, 3 peeled shallots into the pot. When the water boils, add the chicken, adjust the heat to medium, cook until the chicken is done for about 45 minutes, skim off the foam, and strain the broth.

Prepare other ingredients
Mix the crab meat with 2 teaspoons of rice wine to remove the fishy smell.
The remaining shallot is sliced thinly.
Cut off the tough ends of the asparagus about 3 – 5cm so that only the soft part remains, then cut the soft part into segments.

Sauté the crab
Place a pan on the stove, add 1/2 tablespoon of cooking oil, when the oil is hot, add the sliced shallots and fry until fragrant over medium heat. Add the crab and sauté, adding 1/2 teaspoon of pepper, sauté evenly for about 5 minutes then turn off the heat.

When cooking, the broth will reduce, so please add more water to the pot to make a total of 3 liters of water. When the water boils, add the asparagus along with 1 teaspoon of salt. Make the broth
Place a pot on the stove with 1 liter of water, add chicken and shallots, and simmer for 40 minutes, then strain the ingredients to obtain the broth.

Preparation of ingredients
Trim the tough parts of the asparagus, then cut it diagonally into pieces about 2 cm thick.
Shrimp should be peeled, with the head, legs, and tail removed, deveined, diced into small pieces, and then soaked in a bowl of rice wine to reduce the fishy smell.
Quick tip for deveining shrimp:
- Count backward from the tail of the shrimp to the second groove connecting the two shell segments, push a toothpick through this spot and gently pull the black vein out.
- You don’t need to use a knife to cut the back of the shrimp; you can also use a toothpick to pry out the head part of the shrimp body to find the black vein. Gently pull out this black thread with your hand, and the shrimp is clean.
