How to choose fresh and delicious beef
- Choose small, tender cuts of beef that are bright red, with small white veins and bright yellow fat. Avoid large and tough cuts. If you press the beef with your hand and it doesn’t stick and has no unpleasant smell, it is good beef.
- The best type is still young beef because it is tender, with white fat and fine fibers.
- Beef that is pale green or has round white spots between the fibers is infested with worms or tapeworms. Beef showing signs of dark color, deep yellow fat is old, will be chewy, with yellow bones, poor meat elasticity, mushy meat, and a slimy surface is sick beef, not good. These are types of meat that should not be purchased for safety.
How to make bread roll with beef and cheese

Mix the dough
Prepare a cup for 3g of yeast and 200ml of warm water at 32 – 38 degrees Celsius. Stir well and let it sit for 5 minutes for the yeast to activate.
Add 240g of all-purpose flour, 1/2 teaspoon of salt, 40g of sugar, 1 egg, the yeast mixture, 50g of unsalted butter, and 150ml of fresh milk, then mix the ingredients well.

Kneading the bread dough
Use your hands to briefly knead the dough until it comes together. Then start kneading using the Folding and Stretching technique.
First, fold the dough over, then use the palm of your hand to press and stretch the dough away. Note that you should press and stretch the dough away, not press down. Next, rotate the dough block 90 degrees and repeat the two steps for 10 minutes.
When the dough begins to smooth out, add 30g of unsalted butter, then repeat the kneading motion for another 15 minutes until the dough forms a uniform, smooth, and elastic mass.
How to recognize that the dough meets the requirements:
- The dough is smooth and elastic, with good stretch.
- The dough does not stick to your hands: When pressed, it feels slightly sticky, but when you lift your finger away, the dough does not stick to your hand.
- Check the dough using the Windowpane test. Tear off a piece of dough and stretch it out. If it forms a thin membrane that is not easily torn and light can pass through, it is good.

Proofing the dough
Use plastic wrap or a thin cloth to tightly cover the bowl of dough and let it proof for about 45 minutes, depending on the room temperature, until the dough doubles in size.

Sauté the beef filling
Wash the beef and chop it finely. Add oil to the pan, wait for the oil to heat up, then add onions and garlic to sauté together. Cook until the onion and garlic mixture turns slightly golden, then add the beef.
Next, add salt, pepper, coriander, and sweet soy sauce and stir together. Cook for about 20 minutes until the beef is golden. Remember to taste the beef to check if the seasoning is right, then turn off the heat.
Tip: To make the beef easier to chop, you can put the beef in the freezer for about 30 minutes, then take it out to chop.

Roll the bread and shape it
Take the risen dough and roll it out to a moderate thickness, then add the cooked beef on top of the dough.
Sprinkle a portion of Cheddar cheese over the beef and roll the dough mixture up. Divide the rolled dough into portions you like. Place the rolls on a baking tray that has been dusted with a layer of flour to prevent sticking after baking.
Cover the tray with a cloth and let the dough rise once more for about 45 minutes.

Bake the bread
Preheat the oven to 170 degrees Celsius for 15 minutes. Brush a layer of egg milk: 1 chicken egg + 15 ml milk mixed well, then brush it around the bread so that the bread will have a nice color when it is cooked.
Next, add the remaining Cheddar cheese on top of the bread and bake the bread at 170 degrees Celsius for 35 – 40 minutes.

- Preheat the oven before baking to stabilize the oven temperature, ensuring the cake cooks evenly.
