- Fresh pork will have a bright color, with the meat being light pink or light red, and the fat being translucent white with a slightly ivory hue.
You should choose pieces of meat that have a dry surface, soft skin, with distinct meat and fat textures, but they must stick tightly together and have the characteristic smell of pork. - When buying, you can press the meat with your hand to test it. If you withdraw your hand and the meat returns to its original shape without any dents, it is fresh meat.
- Absolutely do not buy if the meat has characteristics such as: bruises, pale color or overly dark color, shiny surface, feeling slightly slimy when touched, or a spoiled smell.
- If you buy meat at the market, you can ask the seller to grind it for you, or you can buy the meat home and grind it yourself with a meat grinder.
How to choose clean, quality cauliflower
- About color: Good cauliflower will have a uniform, bright color, especially the darker the color, the sweeter the taste.
- About shape and size: You should choose florets that are compact and round, intact, with a high central surface, small gaps between each floret, tight surface, with fresh green stems, and feel firm when held, with weight proportional to the shape of the cauliflower.
- About firmness: Fresh, good cauliflower will have a hard, solid surface, with a certain crunch, not wilted or soft.
- You should buy from reputable places to ensure the origin and quality of the cauliflower. Avoid buying florets that have wilted stems, are soft, turning yellow, or have pest marks.
How to prepare Stir-fried Noodles with Minced Meat

Prepare the ingredients
Carrots after purchasing, peel, rinse briefly with water, then cut into pieces about the length of one finger.
Cauliflower should be cut in half and soaked in diluted salt water along with bean sprouts for about 10 minutes, then rinse with clean water and drain.
Green onions should have the roots and wilted leaves removed, then washed with water and cut into pieces about 2 finger lengths long.
Next, place the vegetables including bean sprouts, carrots, and cauliflower into a steamer over high heat for about 15 minutes, then take them out and let them drain.
The instant noodles should be blanched in boiling water for about 5 minutes, then drained in a basket and let them drain.
Next, add 2 eggs to a pot of boiling water and boil for about 5 minutes. After the eggs are cooked, place them in a bowl of cold water and let them sit for 10 minutes, then peel off the shells.

Make the noodle dressing
You gradually add to the bowl 4 spoons of soy sauce, 1 tablespoon of chili sauce, 1 tablespoon of oyster sauce, 1/2 tablespoon of sugar, 1/2 tablespoon of seasoning powder, and 1/2 bowl of clean water (rice bowl).
