Pork 300 gr Shrimp paste 1.5 tablespoons Minced lemongrass 2 tablespoons Minced chili 1 tablespoon Minced garlic 1 tablespoon Calamondin lime 1 fruit White wine 1 teaspoon Cooking oil 2 tablespoons Common seasoning a little (salt/ sugar/ monosodium glutamate)

How to Cook Steamed Pork with Shrimp Paste

  • Prepare the Pork

    Soak the pork in diluted salt water for about 10 minutes, rinse with water several times, then cut into bite-sized pieces.

  • Marinating the meat

    Place a pan on the stove with 2 tablespoons of cooking oil. When the oil is hot, add the chopped lemongrass and stir until golden, then add the minced garlic and sauté on low heat until fragrant.

    Add 1 tablespoon of shrimp paste, 1 tablespoon of sugar, 1 teaspoon of white wine, and 1/2 of the minced chili, stirring well.

  • Stewing the meat

    Add the chopped meat and stir evenly over medium heat until the meat is firm.

    Then reduce the heat to low to stew the meat and add 50ml of water, simmer for about 15 minutes until the liquid thickens.

    Season with 1/2 tablespoon of shrimp paste, 1/3 teaspoon of seasoning powder, stir well, then add the remaining minced chili and stew for another 10 minutes.

    Taste and adjust the seasoning to your liking, then turn off the heat. When serving, just add a little lime juice and it’s ready.

  • Prepare the meat

    Soak the purchased meat in diluted salt water mixed with a little lemon juice for about 10 minutes, rinse thoroughly with water several times, remove the skin and cut into small pieces.

    Put the cut meat into the meat grinder and grind it finely.

    Take 3 tablespoons of finely chopped galangal, put it in a sieve, squeeze to get the juice, and add it to the minced meat.

    Add 2 tablespoons of finely chopped lemongrass, 3 tablespoons of shrimp paste, 3 teaspoons of monosodium glutamate, 1 teaspoon of seasoning powder, mix well, and marinate for 30 minutes.

  • Cook the meat

    Place a pan on the stove with 3 tablespoons of pork fat. When the fat melts, add 2 tablespoons of chopped shallots and sauté until fragrant.

    Add the marinated minced meat and stir-fry until the meat is firm, then add 3 tablespoons of annatto oil, mix well.

    Then add 2 tablespoons of pork fat, stir well, and cook on low heat for 60 to 90 minutes.

    Season with 1 tablespoon of shrimp paste, 1 teaspoon of sugar, 1 tablespoon of lime juice, stir well, and cook for an additional 30 minutes. Adjust the seasoning again, then turn off the heat and drain off the excess fat to complete the dish.
