Preparing the chicken
To clean and reduce the odor of chicken meat and intestines, you should wash them thoroughly with cold water, then soak them in diluted saltwater for 15 minutes.
Next, take the chicken and intestines out, wash them 2 – 3 times with clean water and let them drain. Finally, cut the chicken thighs and intestines into bite-sized pieces.

- To prevent the chicken from smelling, you must remove all feathers, including the down and small hairs.
- Soak the chicken in a mixture of salt and vinegar for about 3 – 5 minutes or you can evenly rub this mixture over the chicken, then wash several times with clean water.

Stir-fried chicken
Take 2 cloves of garlic and mince them, then place a pan on the stove, add a little cooking oil to the pan and sauté the garlic until fragrant.
When the garlic is golden and aromatic, add the chicken meat and chicken offal, stirring well a few times to let the chicken absorb the oil.

After the stir-fried chicken has absorbed the seasoning, add 300ml of fresh coconut water and wait for 5 – 10 minutes, at this point the braised chicken has come to a boil, proceed to skim the foam off the surface of the pan.
Reduce the heat, continue to braise the chicken until the chicken meat and offal are tender for about 10 minutes.
Finally, add the lime leaves, the remaining 3 cloves of garlic, and 3 shallots to braise together for about 5 minutes over medium heat. Adjust the seasoning to taste and then turn off the heat.
