How to choose good sweet potatoes for making jam
- You should choose sweet potatoes with red skin, golden inside, that feel firm and heavy when picked up.
- It’s best to select large sweet potatoes that have just been dug up from the ground as they will be fresher. Especially, you should choose yellow sweet potatoes to ensure the jam turns out delicious and visually appealing.
- Avoid buying overly large sweet potatoes, those that are hollow, or have black spots, as they contain a lot of fibers and are not tasty.
How to Make Sweet Potato Jam

Prepare the sweet potatoes
After buying sweet potatoes, peel them, wash them thoroughly, and let them dry.
Next, cut the sweet potatoes into pieces about the length of 3 finger joints and a thickness of about 1/2 of a finger joint to prevent them from breaking during the cooking process.

Soak the sweet potatoes in rice water
Prepare a bowl of rice water and soak all the cut sweet potatoes for 4 hours to ensure the sweet potato jam has the necessary firmness.
After 4 hours, take the sweet potatoes out and rinse them several times with water, then let them dry.

Marinate with sugar
Put 1 pot of water on the stove and add the juice of 1/2 lemon, then simmer on medium heat for about 5 – 7 minutes.
When the water boils, immediately add the drained sweet potatoes and boil for about 2 minutes, then remove them, rinse briefly with water, and let them drain.
Next, add the boiled sweet potatoes to another pot with 500g of sugar. Mix well so that the sugar coats all the sweet potatoes and marinate for 4 – 5 hours until the sugar dissolves completely.
Tip: During the marinating process, occasionally use a chopsticks to stir evenly so that the sweet potatoes absorb the sugar evenly. -
Sweet Potato Jam
Place a pan on the stove and pour all the syrup from the pot of sweet potatoes into the pan, cooking over medium heat until the syrup reduces slightly.
Next, add the marinated sweet potatoes along with 1 teaspoon of vanilla extract and stir gently to prevent the potatoes from breaking.
When the syrup begins to thicken and becomes slightly glossy, reduce the heat to the lowest setting and stir continuously.
Continue cooking the sweet potatoes on very low heat until they are dry, with a white powder coating around them, then turn off the heat but keep stirring for a while to let the sweet potatoes cool before removing them.
Once the sweet potatoes have cooled, spread them out on a tray and sun-dry for 1 – 2 hours or longer for the jam to firm up and achieve a beautiful color.
